LIVER, BACON, & ONIONS:

4 slices bacon
2 med. onions, sliced
1 lb. beef liver, sliced
Salt
Pepper
Arrange bacon in single layer in 2 quart (12 x 7 inches) glass baking dish.
Microwave for 4 to 4 1/2 minutes on high or until crisp.
Remove bacon, set aside.
Coat liver slices with bacon drippings, arrange in baking dish.
Add onions.
Cover with wax paper.
Microwave for 14 to 16 minutes on simmer or until meat loses pink color.
Crumble bacon over top.
Let stand, covered, 5 minutes before serving.
How to Remove Raw Smell and Taste in Fresh Liver and Kidney
• Cut into desired sizes the liver and kidney; and dip in near-boiling water for 5 minutes. Wash again and drain well.
• Before cooking, marinade in lemon or vinegar plus pepper and salt, from 30 to 60 minutes.
Note: The kidney needs to be boiled to be tender; while the liver gets hard when cooked longer. Liver acquires bitter taste when over-cooked. Cook liver until the reddish color is all gone.
MOM'S LIVER AND ONIONS:
1 lg. onion, thinly sliced
1 tbsp. vegetable oil
1 lb. chicken livers, rinsed, drained & cut into chunks
1/2 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
1. Combine onion slices and oil; microwave on high for 4 minutes. Remove onions and set aside.
2. Season liver with garlic powder, salt and pepper; microwave, covered, on medium for 7 minutes, stirring once while cooking.
3. Reheat the onion on high for 30 seconds, combine with liver and serve.
CHICKEN LIVERS AND MUSHROOMS:
3 slices bacon, chopped
1/2 med. onion, chopped
1 lb. chicken livers
1 (10 3/4 oz.) can condensed cream of chicken soup
1 (4 oz.) can sliced mushrooms, drained
1/2 c. water
2 tbsp. snipped parsley
1/8 tsp. pepper
Place bacon and onion in 1 1/2 quart casserole, cover. Microwave at high until bacon is crisp and onion is tender, 3 to 6 minutes. Stir in remaining ingredients. Microwave at medium-high until chicken livers are firm and tender and sauce is thickened, 17 to 22 minutes, stirring once or twice. Serve over rice or noodles, if desired.
BACON WRAPPED CHICKEN LIVERS:
1 lb. thinly sliced bacon
Divide bacon slices between 4 paper towel lined paper plates. Cover with paper towel. Microwave at high (10) 2 minutes. Cut each strip in half lengthwise.
1 can (8 oz.) water chestnuts, drain and cut each chestnut in half
1/2 lb. chicken livers (about 20), rinse and drain livers, cut in half
Sprinkle bacon strips lightly with ground cloves an...d brown sugar. Place one piece of chicken liver and one piece of water chestnut at the end of each bacon strip. Roll up, securing with a toothpick. Arrange 10 in a circle on each of 4 paper towel lined paper plates. Cover with paper towel. Microwave on High 4 to 5 minutes, rotating dish 1/4 turn after 2 minutes. When microwaving from refrigerator temperature, increase time for each plate 1/2 to 1 minute.
Makes 40 hors d'oeuvres.

1 lb. beef liver, sliced 1/2" - 3/4" thick

2/3 c. fine bread crumbs
1/2 tsp. salt
1/8 tsp. pepper
1/3 c. Thousand Island dressing
Place bacon slices in microwave baking dish. Cover with wax paper. Cook in microwave oven on high 3 minutes, rotating dish 1/2 turn after 2 minutes. Remove bacon to paper towel. Combine bread crumbs and seasonings. Coat liver with Thousand Island dressing, then put in crumbs to coat thoroughly. Place liver slices in bacon drippings. Cook on high for two minutes and 30 seconds Turn liver slices over and cook on high 3 minutes. Place bacon on top of liver, rotate dish and cook 1 minute. Use wax paper for a cover.
HOENDERLEWERPATEE:
1 groot ui, gekap
1 fyngekapte knoffelhuisie
30 ml botter
15 ml olie
250 g hoenderlewers
2,5 ml swartpeper
sout na smaak
1 sny witbrood, verkrummel
20 ml brandewyn (opsioneel)
45 ml room
suurlemoenskyfies vir garnering
MAAK SO:
Soteer ui en knoffel in botter en olie 2 minute by volle krag. Voeg hoenderlewers by, prik membrane, bedek en mikrogolf 5 minute by volle krag. Roer en mikrogolf nog 5 minute by volle krag. Voeg smaakmiddels, broodkrummels, brandewyn en room by en verpulp in voedselverwerker. Skep in vier ramekinbakkies (85mm deursnee) en plaas in koelkas om te stol.
Garneer met suurlemoenskyfies.

Lewer (skaap of Hoender) Skoongemaak en buise verwyder en in blokkies gesny.

Tamatiesous
Worcester sous
Mosterdsous of poeier
MAAK DAN SO:
Mikrogolf lewer en botter vir 3 min op hoog. Roer af en toe. Meng ander bestanddele tot ‘n pasta.
Voeg mengsel by en mikrogolf vir 4 min. Roer elke min. Mikrogolf vir verder 3 min en haal uit.
MY WENK:
Onthou lewer moet nog pienkerig wees binne, as dit te gaar bebak of gekook word is dit regtig nie lekker nie.
