Skil ui en kap fyn. Skil appel en haal stronk uit en kap fyn. meng appel, ui, maalvleis, krummels en rosyne saam. klits die eier, melk en 25ml van die blatjang, 10ml van die kerriepoeier, sout en pepersaam en meng by vleis. Smeer 'n 22cm ringvorm of broodpan van 25 x 20 x 7cm. Maak frikkadelle en pak hul styf teen mekaar in die pan. Mikrogolf dit vir 7min oop by 70% krag. Meng tamatiesous, suiker, oorblywende blatjang en kerriepoeier. Skep oor halfgaar vleis en mikrogolf 15 tot 18 minute oop op 50% krag. Laat broodjie bietjie staan voor opdiening.

METODE
Meng al die bestanddele en maak medium frikkadelle (nie te styf rol nie)
Meng al die bestanddele van die sous en gooi oor die frikkadelle. Mikrogolf in ‘n oop bak, 1 minuut per frikkadel (of in ‘n gewone oond teen so 180ºC en draai om wanneer een kant lekker gaar lyk. So 30 minute baktyd in totaal.

Bedek en mikrogolf mengsel 5 min. by 100% krag.
Roer goed om los te maak.
Roer broodkrummels, blatjang en wyn by.
Bedek en mikro 10 minute by 70% krag.
Laat 'n rukkie afkoel.
Smeer fyn appelkooskonfyt bo-oor.
Klits melk en eiers en giet bo-oor.
Mikro sowt 25 minute oop by 50% krag tot eiermengsel gestol is.

Plaas koolblare in oondskottel van 3 lt.
Voeg water by, bedek en mikrogolf vir 5 -6 minute op volle krag tot blare sag word.
Dreineer en verwyder stronk van elke blaar.
Voeg beesvleis, varkvleis, rys, sout, peper, suurlemoensap, kruie, pietersielie, ui en knoffel bymekaar en meng goed deur.
Verdeel mengsel in 12 dele en plaas elke deel in ‘n koolblaar.
Rol elke blaar vanaf die breedste kant op en vou die kante in.
Steek vas met tandestokkie en plaas met soomkant na onder in ‘n oondskottel wat liggies gesmeer is.

Sprinkel die eiervrug met ‘n bietjie sout en plaas eenkant vir 30 minute.
Drieneer en druk droog.
Skud in ‘n bietjie olie en rangskik skywe op die boom van ‘n groot vlak bak.
Plaas effens oormekaar indien nodig.
Bedek en mikrogolf vir 6 minute op volle krag.
Die eiervrug moet nie heeltemal gaar wees nie.
Dreineer op papierhanddoek.
Giet ‘n bietjie olie in ‘n oondskottel en mikrogolf vir 1 minuut op volle krag.

Die ui in dun ringe of blokkies en mikrogolf vir 2 minute op volle krag.
Voeg die maalvleis by en mikrogolf vir 5 minute tot gaar.
Voeg die speserye by en roer goed.
Roer die tamatiepasta, voeg 'n bietjie water by om die tamatiepasta bietjie op te los.
Maar nie te veel water nie.
Versprei die tortilla chip eweredig onder in 'n bak.
Sit die maalvleis bo-oor.
Giet sous oor die soetrissies wat in klein stukkies gesny en versprei dit.
Sprinkel met kaas.
Sit in mikrogolf vir 4-5 minute op volle krag.
SNAPPY GLAZED MEATBALLS:

Not only are these meatballs snappy to make – they’re saucy!!
1 pound lean ground beef or combination of pork and beef [500grm]
1 cup chili sauce, divided
1/3 cup fresh bread crumbs
1 egg
2 tablespoons fi nely chopped onion
1/2 teaspoon chopped garlic
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup grape jelly
In medium bowl, combine beef, 1/4 cup chili sauce, bread crumbs, egg,onion, garlic, salt and pepper.
Shape meat mixture into 1-inch round balls.
Arrange meatballs in 10-inch round microwave-safe casserole.
Cover with plastic wrap, leaving a corner open to vent steam.
Microwave on HIGH, 10-12 minutes or until no longer pink, turning meatballs once after 4 minutes.
Remove from microwave; drain away any juices or liquids.
Combine remaining chili sauce and jelly in small bowl.
Spoon sauce evenly over meatballs.
Microwave on HIGH, 3 minutes, stirring once to coat, until heated through.
Serve immediately.
Makes about 30 meatballs.

Voeg 1 kop water by en meng liggies.

Rasper tamatie grof.
Maak brood fyn en meng dit met die ui, tamatie, maalvleis, bladjang, sout, peper en worcestersous.
Vorm 8 groot frikkadelle.
Plaas die frikkadelle in ‘n sirkel teen die wand van ‘n vlak bak.
Meng oorblywende koppie water met die mielieblom en soppoeier.
Giet dit oor die frikkadelle.
Mikrogolf op volle krag vir ongeveer 25 minute totdat frikkies gaar is en die sous effens dik is.

BEEF CORN PIE:

1 sm. clove garlic (chopped very fine)
1 (8 oz.) can whole tomatoes drained
(save 1/2 c. liquid)
1/2 tsp. salt
1/2 cup. shredded cheddar cheese
2 tbsp. chopped onion
1 (8 oz.) can whole kernel corn
12 pitted olives, (optional)
2 tsp. chili powder
1 egg
1/2 cup. yellow corn meal
Dash of paprika
Crumble ground beef into 1-1/2 quart casserole, add onion and garlic.
Cover loosely and microwave on high (100%) 2 minutes.
Break up beef and stir.
Cover and microwave on high until beef is not pink, 2 or 3 minutes.
Drain excessive fat. Stir in tomatoes, corn, olives, chili powder and salt.
Cover tightly and microwave on high until mixture is hot and bubbly, 4 to 6 minutes.
Stir.
Beat egg in bowl, stir in corn meal and reserve tomato liquid.
Pour over meat mixture.
Sprinkle with cheese and paprika.
Microwave uncovered on high until topping is no longer doughy, 3 to 6 minutes.
CHILI CON CARNE:

Spice up your menu with this hearty homemade chili.
1 lb. lean ground beef [500grm]
1 cup chopped onion
1/2 cup finely chopped green pepper
1 teaspoon chopped garlic
1 can (16 oz.) dark red kidney beans, rinsed and drained
1 can (15 oz.) black beans, rinsed and drained
1 can (14.5 oz.) diced tomatoes
1 can (8 oz.) tomato sauce
1/2 cup water
1 packet (1.25 oz.) chili seasoning
Additional toppings such as sour cream, diced avocado, jalapeño slices, shredded cheese and onions (optional).
Combine ground beef, onion, green pepper and garlic in 2-1/2 quart
microwave-safe casserole.
Microwave, covered, on HIGH, 5-7 minutes or until beef is no longer pink; stir once halfway through cooking.
Drain.
Stir in beans, tomatoes, tomato sauce, water and seasoning.
Microwave on HIGH, 10-12 minutes or until mixture begins to bubble, stirring every 3 minutes.
Microwave on power Level 4, 15 minutes. [40%]
Ladle into bowls to serve.
Top with additional toppings, if desired.
Serve with rice or on a bun.

This one-skillet dish is full of rich flavor, featuring sweet potatoes, ground beef and mixed veggies kicked up with a chile-laced curry sauce and a sprinkling of ginger and sugar. The store-bought ingredients cut the cooking time down to just 20 minutes, from start to finish.
■Active Time: 15 minutes
■Total Time: 20 minutes
1 bag (24 oz) frozen sweet potatoes
1 lb lean ground beef
1 medium onion, chopped
1 bag (1 lb) frozen mixed vegetables
1 jar (15 oz) curry cooking sauce
1 can (14.5 oz) diced tomatoes
1/3 cup water
2 Tbsp each butter and sugar
1/2 tsp salt
1/4 tsp ground ginger
Microwave sweet potatoes as package directs.
Heat large ovenproof skillet over medium high heat.
Add ground beef and onion; cook, breaking up meat, 5 minutes or until browned.
Stir in vegetables, curry sauce and tomatoes with their juices.
Simmer, covered, 5 minutes or until vegetables are tender.
Mash sweet potatoes with remaining ingredients until smooth.
Drop spoonfuls of mashed potatoes on top of beef mixture, spreading to cover most of the top.
Bake 3 to 5 minutes until top is lightly browned.

1 tsp. salt
1 tbsp. Worcestershire sauce
1 tbsp. dried minced onion
Mix together all ingredients.
Shape into balls and arrange in a circle in a 9 or 10 inch glass pie plate.
Cover plate with wax paper.
Microwave on high 8 to 11 minutes, rotating plate and turning meatballs over once or twice during cooking.

1 med. potato, peeled (cook in microwave like a baked potato)
2 tbsp. dried onion soup mix
1 tbsp. dried parsley flakes
1 egg, beaten
2 cup. beef broth (make with bouillon)
1 tbsp. Worcestershire sauce or teriyaki sauce
2 tbsp. cornstarch
2 tbsp. water
Combine ground beef, potato, onion, soup mix, parsley flakes and egg in large mixing bowl.
Shape into 12 (1 1/2") meatballs; set aside.
In a 2 quart micro proof casserole, mix beef broth and Worcestershire sauce.
Add meatballs.
Cook, covered on 70 (roast) 10 minutes.
Combine cornstarch and water in small bowl until smooth; stir into meatballs and cover.
Cook on 70 (roast) 3 to 4 minutes or until sauce is thickened (200 degrees if using thermometer).
Let stand, covered 5 minutes before serving.
20-MINUTE CHILI (MICROWAVE):

In microwave oven cook beef, onion and garlic in large bowl 5 minutes, stirring occasionally.
Add the remaining ingredients.
Cook 5 minutes, stirring occasionally.
Great on a chilly day.
MICROWAVE HAWAIIAN MEATBALLS:
1 can (20 oz.) pineapple chunks
1 lb. ground beef [500 grm]
1 egg
1 tbsp. instant minced onion
1/2 cup. oatmeal
1/8 tsp. allspice
1/8 tsp. cloves
2 tbsp. reserved pineapple juice
SAUCE:
1/3 cup. reserved pineapple juice
1/2 cup. catsup
1/3 cup. brown sugar
Drain pineapple, reserve juice. Mix beef, egg, oatmeal, seasonings and 2 tablespoon juice. Mold small amount of meat mixture around each pineapple chunk. Place in 12 x 8 inch baking dish. Cover with waxed paper and microwave on high for 8 minutes. Pour off meat juices.
Combine 1/3 cup juice, catsup and brown sugar, pour over meat balls. Cook on high 3 to 5 minutes until heated through.
MICROWAVE BEEF PIE:
3/4 lb. of ground beef
1 sm. clove garlic (chopped very fine)
1 (8 oz.) can whole tomatoes drained (save 1/2 c. liquid)
1/2 tsp. salt
1/2 cup. shredded cheddar cheese
2 tbsp. chopped onion
1 (8 oz.) can whole kernel corn
12 pitted olives, (optional)
2 tsp. chili powder
1 egg
1/2 cup. yellow corn meal
Dash of paprika
Crumble ground beef into 1 1/2 quart casserole, add onion and garlic. Cover loosely and microwave on high (100%) 2 minutes. Break up beef and stir. Cover and microwave on high until beef is not pink, 2 or 3 minutes. Drain excessive fat. Stir in tomatoes, corn, olives, chili powder and salt. Cover tightly and microwave on high until mixture is hot and bubbly, 4 to 6 minutes. Stir. Beat egg in bowl, stir in corn meal and reserve tomato liquid. Pour over meat mixture. Sprinkle with cheese and paprika. Microwave uncovered on high until topping is no longer doughy, 3 to 6 minutes.
MICROWAVE PINWHEEL MEAT LOAF:
Microwave setting: High 100%; Medium High 70%. Microwave cooking time: 25 minutes.
For 4 servings you will need:
1 1/2 lbs. ground lean beef
1/2 cup. fine dry bread crumbs
1 egg, beaten
1 1/4 tsp. salt, divided
1/4 cup. ketchup, divided
1/8 tsp. pepper
1 (10 oz.) pkg. frozen chopped spinach, defrosted, well drained
3/4 cup. shredded Mozzarella cheese, divided
3 tbsp. grated Parmesan cheese
1/2 tsp. dried oregano or marjoram or rosemary leaves
1 clove garlic, minced
Chopped parsley
1. Combine beef, bread crumbs, egg, 1 teaspoon salt, pepper and 2 tablespoons ketchup.
2. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining salt, and the garlic.
3. Pat out beef mixture on waxed paper to 14 x 9 inch rectangle. Spread spinach filling on meat to 3/4 inch from edges.
4. Roll up from short end to form pinwheel loaf. Pinch ends together to seal well.
5. Place in a 9 x 5 inch microsafe dish, pressing to fit in loaf shape. Cover with waxed paper.
6. Microwave at High power for 5 minutes. Pour off juices. Cover.
7. Microwave at Medium high power for 20 minutes. Give dish a half turn after 10 minutes. Spread with remaining ketchup.
8. Sprinkle with cheese. Cover with aluminum foil, and let stand 10 minutes.
9. Sprinkle with chopped parsley. Serve hot or cold.
TASTY TACO PIE:
1 lb. ground beef
2 (8 oz.) cans tomato sauce
1 (1.25 oz.) pkg. taco seasoning mix
1 (8 oz.) can refrigerated crescent dinner rolls
1/2 lb. Velveeta Mexican cheese
1 cup. shredded lettuce
1/2 cup. chopped tomatoes
1/4 cup. pitted ripe olive slices
Brown meat;
drain. Stir in tomato sauce and seasoning mix. Simmer 5 minutes. Press dough onto bottom and sides of ungreased 12" pizza pan pressing edges together to seal. Prick bottom and sides with fork. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Cover with meat mixture, top with cheese spread. Continue baking until cheese spread begins to melt. Top with remaining ingredients. Serve with sour cream if desired.
Microwave:
Crumble meat into 1 quart casserole dish, microwave on high 3 to 4 minutes or until meat loses pink color when stirred. Drain, stir in tomato sauce and seasoning mix. Microwave 3 minutes.

Everyone loves the fl avor combinations found in this meat loaf, so much so, they will be asking for seconds.
1-1/2 lbs. lean ground beef
1 can (15 oz.) pizza sauce, divided
1-1/2 cups (6 oz.) shredded Italian blend cheese
1/2 cup dried bread crumbs
1 egg
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
HOW TO:
1.Lightly spray 10-inch square microwave-safe casserole with no-stick cooking spray. In large bowl, combine beef, 1/2 cup pizza sauce, cheese, bread crumbs, egg, seasonings, salt and pepper; mix well. Shape meat mixture to form a 9- x 5-inch loaf. Place loaf in casserole. Cover casserole with lid, leaving corners open to vent steam.
2. Microwave on power Level 5, 18-22 minutes or until meat thermometer reads 160ºF when inserted in center of loaf. Remove from microwave; let stand 5 minutes before slicing.
3. Place remaining pizza sauce in small microwave-safe bowl. Microwave on HIGH, 15-20 seconds or until heated through. Top each serving, as desired, with pizza sauce.

Add the diced pepper tops, onion, and carrot to colander. Cover loosely with waxed paper, microwave on high 4 to 6 minutes, stirring once, until meat is no longer pink and vegetables are tender. Drain any liquid that's left in the colander, then put meat mixture in a bowl. Stir in rice, 3/4 cup cheese, tomato sauce, and the salt and pepper. Spoon that rice mix into the peppers in the casserole. Cover loosely with waxed paper. Microwave on high for 11 to 14 minutes, rotating dish three times, until peppers are crisp, tender, and hot. SHIPWRECK BEAN POT:
Ingredients Needed:
1 15 oz can tomato sauce 1 can sliced potatoes drained
1 can of kidney beans rinsed 1 small can sliced mushrooms drained

6 slices cooked bacon
1 tsp minced garlic
HOW TO COOK:
Brown the mince in a pot. Drain off excess fat and then mix in all other ingredients. Place lid on and microwave for 10 minutes.
I love to serve this with shredded cheddar cheese on top for a little more flavor! Such an easy and delicious meal!
EASY MICROWAVE CABBAGE ROLLS:
Cabbage comes in a lot of different varieties (Iceberg Cabbage (round and most common) Chinese Cabbage (Shaped sort of like an egg), Red Cabbage, Leaf Cabbage, Wild Cabbage and etc.
Usually it doesn’t matter which one you pick because they all taste right about the same, however; some varieties have a stronger flavor than others.
Cabbage contains all of the fibers, amino acids and cinigrin found in other green leafy vegetables. (The one’s your supposed to eat 1-4 cups of per day) Cabbage is also cheap (good for your budget), and can be very filling.
As a student, this recipe is great because its not only health but cheap as well. Depending upon whether you are vegetarian, vegan or a meat eater, you can substitute the filling. Ground beef for meat eaters, mushrooms for all others. The recipe is great both ways!
Also, any flat leaf cabbage will be great for this recipe. If you are making it for a party, try making half with green and half with red to add a little ‘oomph’ and color to the food.

Ingredients
2 cabbage leaves
½ cup chopped mushrooms or ground beef
½th teaspoon salt
1/8th teaspoon garlic powder
½ cup water
2 tablespoons Ricotta cheese (cottage works to)
Instructions
First, you will want to prepare the cabbage leaves. You will need a microwaveable dish that is large enough to lay the leaves out flat. Cover each leave in about 1/8th of an inch of water and microwave for 2-3 minutes. The leaves should be soft but not soggy.
If you are using the mushrooms, chop them. Microwave your filling for 30 seconds for mushrooms and 1 minute for ground beef. If you are using mushrooms, stir, mix in a tablespoon of water and microwave for an additional thirty seconds.
Remove the cabbage leaves from the water and pat them dry with a paper towel or clean cloth. Sprinkle each leaf with a pinch of salt and mix the remaining spices in with your meat or mushroom filling.
Lay the cabbage out flat on a plate and place one tablespoon of ricotta cheese on the cabbage. Add half of the meat and roll. You may either fold both ends or leave them open according to preference. Remember, the tighter you roll the cabbage, the nicer it will look.
You may pin the cabbage together with a toothpick if desired.
PIZZA CASSEROLE:
1kg ground mince, browned and drained
1 (14 oz.) can pizza sauce
1 (4-6 oz.) can mushrooms and liquid
1/4 tsp. garlic powder
1 1/2 cup. uncooked macaroni
3 oz. pepperoni slices
1 cup. water
2 cup. Mozzarella cheese, shredded
METHOD:
Place all ingredients except cheese into 2 quart casserole. Cook on high in microwave for 17-20 minutes, stirring halfway through. When done, put the cheese on top and let set until melted. Stir cheese in.
ENCHILADA TORTE:
Prep/Cook Time: 20 min.

1 jar (16 oz.) Chunky Salsa
2 tbsp. chili powder
8 (6 to 8”) flour tortillas
1 can mushroom soup
1 cup shredded Cheddar cheese
Sour cream (optional)
COOK beef in skillet until browned.
Pour off fat.
ADD salsa and chili powder.
LAYER 4 tortillas in 2-qt. microwave-safe shallow baking dish.
Top with half of the meat mixture and half of the soup.
Repeat layers.
Top with cheese. Cover.
MICROWAVE at 70% power for 8 min. or until hot.

1 medium onion, chopped
2 garlic cloves, crushed
15 ml fresh ginger, grated
500 g lean minced beef
5 ml sugar
3 ml ground cumin

3 ml cayenne pepper salt & freshly ground

½ packet ready-made scone mix

WHAT TO DO:
Mix oil, onions, garlic and ginger Medium Gourmet Roaster Bowl. Microwave covered for 5 minutes. Add mince, microwave for 10 minutes. Break lumps with fork; add sugar, spices, salt, pepper and tomatoes. Microwave for 10 minutes. Prepare scone dough

DIE SOUS:
Verhit die margarine in ‘n kastrol en die braai die ui daarin tot sag. Meng al ander bestanddele, behalwe die piesangs, en roer by die uie. Snipper nou twee van die piesangs en roer dit by die sous. Laat die sous ‘n paar minute prut tot die piesangs sag is. Sny die ander 4 piesangs in skywe en versprei oor die frikkadelle in die oondskottel. Bestanddele:
2 eetlepels margarien of botter
1 ui, opgekap
2 teelepels kerrie
1 teelepel borrie
750g maalvleis
¾ koppie broodkrummels
½ koppie witwyn
2 eetlepels blatjang
sout na smaak
2 eiers
100ml melk
handvol sultanas
2 eetlepels gevlokte amandels
Metode:
Smelt margarien in 'n groot bak vir 'n minuut in mikrogolf op 100%.
Voeg die ui by en maak gaar vir 'n verdere 2 tot 3 minute.
Voeg die maalvleis, speserye en sout by en sit terug in mikrogolf vir 5 minute.
Haal uit en roer goed.
Voeg die res van die bestanddele (behalwe mel, eiers en amandels) by, roer goed, en druk mooi plat in bak.
Klits die melk en eiers saam en bedek die bobotie daarmee, sprinkel die amandels bo-oor, en mikrogolf vir 8 minute.
Bedien met geel rys en slaai.

Metode:
Smeer vierkantig bak van 20 x 20cm. Voer boom met waspapier...
Smeer blatjang op papier. Rangskik wortels op blatjang en hou eenkant. Mikro botter en ui 2min op 100%. Voeg maalvleis, agurkies en p/sielie by en mikro 5min op 100% en roer 2 keer. Roer res best, behalwe aartappel by. Bedek en mikro 10min op 70% en roer net 1 keer. Laat staan 10min. Smeer helfte van aartappel op blatjang. Skep vleismengsel bo op en druk liggies vas. Skep res aartappel bo op. Mikro 15min op 50%. Keer uit en bedien.

CAPE MALAY BOBOTIE:
Bobotie is a favourite meal in South Africa. It is inexpensive to make using a good South African Cape Malay recipe, and exceptionally easy to prepare. Normally people cook bobotie in a regular electric or gas oven, particularly if they are using a traditional South African Cape Malay recipe. But it is even simpler to use a microwave oven to cook your bobotie - and it will take less than half the time. This South African Cape Malay recipe gives the option of using minced beef or lamb, depending on your taste.
INGREDIENTS:
750 g minced beef or lamb (as lean as possible)
1 medium-sized onion, chopped
25 ml butter or sunflower oil
1 thick slice of bread
200 ml milk
15 ml smooth apricot jam
60 ml lemon juice
60 g seedless raisins
30 g slivered almonds
40 ml medium curry powder
salt and pepper
6 lemon or bay leaves
2 eggs
YELLOW RICE:
250 g long-grain rice
600 ml boiling water
2.5 ml turmeric
5 ml salt
50 g yellow sugar
15 g butter
1 stick curled cinnamon
WHAT TO DO:
Start by soaking the bread in half the milk. Heat the butter or oil in a two litre casserole dish on high for a minute. Stir in the onion and cook on high for three minutes. Now add all the ingredients except for the remaining milk, eggs and the leaves. Mix well and cover the casserole with a lid or with plastic film. If using plastic, vent it by making small slits with a knife, or by poking holes in it with a fork. Cook on high for a further ten minutes. Stir after five minutes. When the full ten minutes is up, stir well and season with salt and pepper. Smooth the top of the meat and place the lemon or bay leaves on top. Beat the milk and eggs together and then pour this mixture over the meat. Cook in the microwave uncovered for six minutes, on high.
Serve with yellow rice made by first rinsing the rice in a sieve under cold running water before boiling it in the water in a large casserole or glass dish on high for about 14 minutes, together with the other ingredients. Stir the rice half way through the cooking process. When it is done, remove the stick of cinnamon and stir again.
Traditional chutney, desiccated coconut and chopped nuts will complete this quick and easy South African Cape Malay recipe.
CREAMY BEEF NOODLES:
One of the most easy microwave meals to perfect, this dish can be made in approximately half an hour.
INGREDIENTS:
1 - 1½kg beef mince
1 can of cream of mushroom soup
1 - 4 ounce can of mushroom pieces
4 cups of uncooked noodles
1 ½ tablespoons of mustard
2 ½ cups of water
1 tablespoon of parsley flaked
2 quart glass casserole dish
WHAT TO DO:
You will first need to place your beef inside your casserole pan, breaking it up with a fork as best you can and distributing evenly along the bottom. As with other easy microwave meals, put your casserole dish in the microwave for 6-8 minutes to cook the meat. Drain as much fat out of the casserole pan as possible.
Stir the meat around again with a whisk or another large utensil to help crumble the meat even further. Add your remaining ingredients to the casserole pan, mixing them with the hamburger meat until distributed evenly throughout the mixture. Cover your dish and microwave the concoction for 15-17 minutes until the noodles are tender, remembering to stir occasionally throughout the process. Let cool to a tolerable level before serving.
MANGO MEAT LOAF: [EASY MICROWAVE MEALS]
1 - 1½kg lean ground beef
1 Cup chopped mango
1 cup bread crumbs
1 egg
1 onion, grated
salt and pepper to taste
WHAT TO DO:
Combine all ingredients in a bowl and combine together with your hands. Form into a loaf and place in a glass loaf pan. Cover with microwave safe waxed paper and cook in the microwave for 15-20 minutes or until meat thermometer reads 160 degrees.
MICRO COOKED MUSHROOM PATTIES: [EASY MICROWAVE MEALS]
1/4 C of cornstarch
2- 1/2 Cups beef broth
1 (6 oz.) jar of sliced mushrooms
4 tsp Worcestershire sauce
1 tsp dried bail
1 egg
1/2 Cup bread crumbs
1 onion, grated
1/2 tsp season salt
1/4 tsp pepper

WHAT TO DO:
Blend together cornstarch and beef broth in a microwave safe casserole dish. Stir in mushrooms, Worcestershire sauce and basil. In a separate bowl, blend together and mix together egg, bread crumbs, onion, salt and pepper. Add ground beef to bread crumb mixture. Mix together until you can form into 6 patties and place in the microwave safe casserole dish. Microwave patties on high for 6-10 minutes or until patties are cooked through. Halfway through cooking turn patties around.

Bedek en mikrogolf vir 6 minute op volle krag.
Die eiervrug moet nie heeltemal gaar wees nie.
Dreineer op papierhanddoek.
Giet ‘n bietjie olie in ‘n oondskottel en mikrogolf vir 1 minuut op volle krag.
Voeg uie en knoffel by en roer by olie in.
Mikrogolf vir 5 minute op volle krag.
Voeg vleis by en mikrogolf vir nog 5 minute op volle krag.
Roer minstens een keer.
Voeg tamaties, tamatiepasta, orego, kaneel en geurmiddels by.
Mikrogolf sonder om te bedek vir 12 minute by volle krag.
Roer af en toe.
Was aartappels en plaas op bord en mikrogolf vir 8 – 10 minute by volle krag.
Aartappels moet slegs gedeeltelik gaar wees.
Skil en sny in skywe.
Neem ‘n groot gesmeerde oondskottel en plaas lae vleismengsel, eiervrug en aartappels daarin.
Voeg die helfte van die cheddarkaas en die eiers by die sous en meng goed.
Giet oor die boonste aartappellaag.
Sprinkel die res van die cheddarkaas en die parmesaankaas oor.
Mikrogolf sonder om te bedek vir 15 – 20 minute op HOOG.
Die mengsel moet baie warm wees en die tamaties moet teen die kante borrel.

125 g skyfies (Tortilla-Chips/Tacco-Chips)
5 eetlepels van kruie (warm sous of salsa Tacco)
75 g kaas, gerasperde cheddarkaas
miskien pepperoni, gepekelde
Olie, vir braai
bietjie komyn
Die ui in dun ringe of blokkies en mikrogolf vir 2 minute op volle krag.
Voeg die maalvleis by en mikrogolf vir 5 minute tot gaar.
Voeg die speserye by en roer goed.
Roer die tamatiepasta, voeg 'n bietjie water by om die tamatiepasta bietjie op te los.
Maar nie te veel water nie.
Versprei die tortilla chip eweredig onder in 'n bak.
Sit die maalvleis bo-oor.
Giet sous oor die soetrissies wat in klein stukkies gesny en versprei dit.
Sprinkel met kaas.
Sit in mikrogolf vir 4-5 minute op volle krag.
SNAPPY GLAZED MEATBALLS:

Not only are these meatballs snappy to make – they’re saucy!!
1 pound lean ground beef or combination of pork and beef [500grm]
1 cup chili sauce, divided
1/3 cup fresh bread crumbs
1 egg
2 tablespoons fi nely chopped onion
1/2 teaspoon chopped garlic
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 cup grape jelly
In medium bowl, combine beef, 1/4 cup chili sauce, bread crumbs, egg,onion, garlic, salt and pepper.
Shape meat mixture into 1-inch round balls.
Arrange meatballs in 10-inch round microwave-safe casserole.
Cover with plastic wrap, leaving a corner open to vent steam.
Microwave on HIGH, 10-12 minutes or until no longer pink, turning meatballs once after 4 minutes.
Remove from microwave; drain away any juices or liquids.
Combine remaining chili sauce and jelly in small bowl.
Spoon sauce evenly over meatballs.
Microwave on HIGH, 3 minutes, stirring once to coat, until heated through.
Serve immediately.
Makes about 30 meatballs.

Voeg 1 kop water by en meng liggies.

Vorm 8 groot frikkadelle.
Plaas die frikkadelle in ‘n sirkel teen die wand van ‘n vlak bak.
Meng oorblywende koppie water met die mielieblom en soppoeier.
Giet dit oor die frikkadelle.
Mikrogolf op volle krag vir ongeveer 25 minute totdat frikkies gaar is en die sous effens dik is.

1 sm. clove garlic (chopped very fine)
1 (8 oz.) can whole tomatoes drained
(save 1/2 c. liquid)
1/2 tsp. salt
1/2 cup. shredded cheddar cheese
2 tbsp. chopped onion
1 (8 oz.) can whole kernel corn
12 pitted olives, (optional)
2 tsp. chili powder
1 egg
1/2 cup. yellow corn meal
Dash of paprika
Crumble ground beef into 1-1/2 quart casserole, add onion and garlic.
Cover loosely and microwave on high (100%) 2 minutes.
Break up beef and stir.
Cover and microwave on high until beef is not pink, 2 or 3 minutes.
Drain excessive fat. Stir in tomatoes, corn, olives, chili powder and salt.
Cover tightly and microwave on high until mixture is hot and bubbly, 4 to 6 minutes.
Stir.
Beat egg in bowl, stir in corn meal and reserve tomato liquid.
Pour over meat mixture.
Sprinkle with cheese and paprika.
Microwave uncovered on high until topping is no longer doughy, 3 to 6 minutes.
CHILI CON CARNE:

Spice up your menu with this hearty homemade chili.
1 lb. lean ground beef [500grm]
1 cup chopped onion
1/2 cup finely chopped green pepper
1 teaspoon chopped garlic
1 can (16 oz.) dark red kidney beans, rinsed and drained
1 can (15 oz.) black beans, rinsed and drained
1 can (14.5 oz.) diced tomatoes
1 can (8 oz.) tomato sauce
1/2 cup water
1 packet (1.25 oz.) chili seasoning
Additional toppings such as sour cream, diced avocado, jalapeño slices, shredded cheese and onions (optional).
Combine ground beef, onion, green pepper and garlic in 2-1/2 quart
microwave-safe casserole.
Microwave, covered, on HIGH, 5-7 minutes or until beef is no longer pink; stir once halfway through cooking.
Drain.
Stir in beans, tomatoes, tomato sauce, water and seasoning.
Microwave on HIGH, 10-12 minutes or until mixture begins to bubble, stirring every 3 minutes.
Microwave on power Level 4, 15 minutes. [40%]
Ladle into bowls to serve.

This one-skillet dish is full of rich flavor, featuring sweet potatoes, ground beef and mixed veggies kicked up with a chile-laced curry sauce and a sprinkling of ginger and sugar. The store-bought ingredients cut the cooking time down to just 20 minutes, from start to finish.
■Active Time: 15 minutes
■Total Time: 20 minutes
1 bag (24 oz) frozen sweet potatoes
1 lb lean ground beef
1 medium onion, chopped
1 bag (1 lb) frozen mixed vegetables
1 jar (15 oz) curry cooking sauce
1 can (14.5 oz) diced tomatoes
1/3 cup water
2 Tbsp each butter and sugar
1/2 tsp salt
1/4 tsp ground ginger
Microwave sweet potatoes as package directs.
Heat large ovenproof skillet over medium high heat.
Add ground beef and onion; cook, breaking up meat, 5 minutes or until browned.
Stir in vegetables, curry sauce and tomatoes with their juices.
Simmer, covered, 5 minutes or until vegetables are tender.
Mash sweet potatoes with remaining ingredients until smooth.
Drop spoonfuls of mashed potatoes on top of beef mixture, spreading to cover most of the top.

1 med. potato, peeled (cook in microwave like a baked potato)
2 tbsp. dried onion soup mix
1 tbsp. dried parsley flakes
1 egg, beaten
2 cup. beef broth (make with bouillon)
1 tbsp. Worcestershire sauce or teriyaki sauce
2 tbsp. cornstarch
2 tbsp. water
Combine ground beef, potato, onion, soup mix, parsley flakes and egg in large mixing bowl.
Shape into 12 (1 1/2") meatballs; set aside.
In a 2 quart micro proof casserole, mix beef broth and Worcestershire sauce.
Add meatballs.
Cook, covered on 70 (roast) 10 minutes.
Combine cornstarch and water in small bowl until smooth; stir into meatballs and cover.
Cook on 70 (roast) 3 to 4 minutes or until sauce is thickened (200 degrees if using thermometer).
Let stand, covered 5 minutes before serving.
20-MINUTE CHILI (MICROWAVE):

1 (15-20 oz.) can kidney beans, drained

1 tbsp. chili powder
1 1/2 tsp. salt
1/4 tsp. pepper
In microwave oven cook beef, onion and garlic in large bowl 5 minutes, stirring occasionally.
Add the remaining ingredients.
Cook 5 minutes, stirring occasionally.
Great on a chilly day.
MICROWAVE HAWAIIAN MEATBALLS:
1 can (20 oz.) pineapple chunks
1 lb. ground beef [500 grm]
1 egg
1 tbsp. instant minced onion
1/2 cup. oatmeal
1/8 tsp. allspice
1/8 tsp. cloves
2 tbsp. reserved pineapple juice
SAUCE:
1/3 cup. reserved pineapple juice
1/2 cup. catsup
1/3 cup. brown sugar
Drain pineapple, reserve juice. Mix beef, egg, oatmeal, seasonings and 2 tablespoon juice. Mold small amount of meat mixture around each pineapple chunk. Place in 12 x 8 inch baking dish. Cover with waxed paper and microwave on high for 8 minutes. Pour off meat juices.
Combine 1/3 cup juice, catsup and brown sugar, pour over meat balls. Cook on high 3 to 5 minutes until heated through.

1/2 cup. fine dry bread crumbs
1 egg, beaten
1 1/4 tsp. salt, divided
1/4 cup. ketchup, divided
1/8 tsp. pepper
1 (10 oz.) pkg. frozen chopped spinach, defrosted, well drained
3/4 cup. shredded Mozzarella cheese, divided
3 tbsp. grated Parmesan cheese
1/2 tsp. dried oregano or marjoram or rosemary leaves
1 clove garlic, minced
Chopped parsley
1. Combine beef, bread crumbs, egg, 1 teaspoon salt, pepper and 2 tablespoons ketchup.
2. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining salt, and the garlic.
3. Pat out beef mixture on waxed paper to 14 x 9 inch rectangle. Spread spinach filling on meat to 3/4 inch from edges.
4. Roll up from short end to form pinwheel loaf. Pinch ends together to seal well.
5. Place in a 9 x 5 inch microsafe dish, pressing to fit in loaf shape. Cover with waxed paper.
6. Microwave at High power for 5 minutes. Pour off juices. Cover.
7. Microwave at Medium high power for 20 minutes. Give dish a half turn after 10 minutes. Spread with remaining ketchup.
8. Sprinkle with cheese. Cover with aluminum foil, and let stand 10 minutes.
9. Sprinkle with chopped parsley. Serve hot or cold.
TASTY TACO PIE:
1 lb. ground beef
2 (8 oz.) cans tomato sauce
1 (1.25 oz.) pkg. taco seasoning mix
1 (8 oz.) can refrigerated crescent dinner rolls
1/2 lb. Velveeta Mexican cheese
1 cup. shredded lettuce
1/2 cup. chopped tomatoes
1/4 cup. pitted ripe olive slices
Brown meat;
drain. Stir in tomato sauce and seasoning mix. Simmer 5 minutes. Press dough onto bottom and sides of ungreased 12" pizza pan pressing edges together to seal. Prick bottom and sides with fork. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Cover with meat mixture, top with cheese spread. Continue baking until cheese spread begins to melt. Top with remaining ingredients. Serve with sour cream if desired.
Microwave:
Crumble meat into 1 quart casserole dish, microwave on high 3 to 4 minutes or until meat loses pink color when stirred. Drain, stir in tomato sauce and seasoning mix. Microwave 3 minutes.

METODE
Meng al die bestanddele en maak medium frikkadelle (nie te styf rol nie).Meng al die bestanddele van die sous en gooi oor die frikkadelle. Mikrogolf in ‘n oop bak, 1 minuut per frikkadel (of in ‘n gewone oond teen so 180ºC en draai om wanneer een kant lekker gaar lyk. So 30 minute baktyd in totaal.

Everyone loves the fl avor combinations found in this meat loaf, so much so, they will be asking for seconds.
1-1/2 lbs. lean ground beef
1 can (15 oz.) pizza sauce, divided
1-1/2 cups (6 oz.) shredded Italian blend cheese
1/2 cup dried bread crumbs
1 egg
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
HOW TO:
1.Lightly spray 10-inch square microwave-safe casserole with no-stick cooking spray. In large bowl, combine beef, 1/2 cup pizza sauce, cheese, bread crumbs, egg, seasonings, salt and pepper; mix well. Shape meat mixture to form a 9- x 5-inch loaf. Place loaf in casserole. Cover casserole with lid, leaving corners open to vent steam.
2. Microwave on power Level 5, 18-22 minutes or until meat thermometer reads 160ºF when inserted in center of loaf. Remove from microwave; let stand 5 minutes before slicing.
3. Place remaining pizza sauce in small microwave-safe bowl. Microwave on HIGH, 15-20 seconds or until heated through. Top each serving, as desired, with pizza sauce.

Ingredients:
4 lg. green or red bell peppers
12 oz. lean ground beef
1/2 cup chopped onion
1/2 cup shredded carrot
1 1/2 cup cooked long grain white rice (1/2 cup raw)
1 cup shredded cheddar cheese
1 8 oz. can tomato sauce
1 tsp salt
1/4 tsp pepper
Directions:
Cut off tops of pepper; remove seeds and white membranes. Discard stems; dice tops fine. Crumble ground beef into a microwave safe colander set in a shallow 1 1/2 quart casserole dish. Add the diced pepper tops, onion, and carrot to colander. Cover loosely with waxed paper, microwave on high 4 to 6 minutes, stirring once, until meat is no longer pink and vegetables are tender. Drain any liquid that's left in the colander, then put meat mixture in a bowl. Stir in rice, 3/4 cup cheese, tomato sauce, and the salt and pepper. Spoon that rice mix into the peppers in the casserole. Cover loosely with waxed paper. Microwave on high for 11 to 14 minutes, rotating dish three times, until peppers are crisp, tender, and hot. Ingredients Needed:
1 15 oz can tomato sauce 1 can sliced potatoes drained
1 can of kidney beans rinsed 1 small can sliced mushrooms drained
1 - 1½kg mince meat
6 slices cooked bacon
1 tsp minced garlic
HOW TO COOK:
Brown the mince in a pot. Drain off excess fat and then mix in all other ingredients. Place lid on and microwave for 10 minutes.
I love to serve this with shredded cheddar cheese on top for a little more flavor! Such an easy and delicious meal!
EASY MICROWAVE CABBAGE ROLLS:
Cabbage comes in a lot of different varieties (Iceberg Cabbage (round and most common) Chinese Cabbage (Shaped sort of like an egg), Red Cabbage, Leaf Cabbage, Wild Cabbage and etc.
Usually it doesn’t matter which one you pick because they all taste right about the same, however; some varieties have a stronger flavor than others.
Cabbage contains all of the fibers, amino acids and cinigrin found in other green leafy vegetables. (The one’s your supposed to eat 1-4 cups of per day) Cabbage is also cheap (good for your budget), and can be very filling.
As a student, this recipe is great because its not only health but cheap as well. Depending upon whether you are vegetarian, vegan or a meat eater, you can substitute the filling. Ground beef for meat eaters, mushrooms for all others. The recipe is great both ways!
Also, any flat leaf cabbage will be great for this recipe. If you are making it for a party, try making half with green and half with red to add a little ‘oomph’ and color to the food.

Ingredients
2 cabbage leaves
½ cup chopped mushrooms or ground beef
½th teaspoon salt
1/8th teaspoon garlic powder
½ cup water
2 tablespoons Ricotta cheese (cottage works to)
Instructions
First, you will want to prepare the cabbage leaves. You will need a microwaveable dish that is large enough to lay the leaves out flat. Cover each leave in about 1/8th of an inch of water and microwave for 2-3 minutes. The leaves should be soft but not soggy.
If you are using the mushrooms, chop them. Microwave your filling for 30 seconds for mushrooms and 1 minute for ground beef. If you are using mushrooms, stir, mix in a tablespoon of water and microwave for an additional thirty seconds.
Remove the cabbage leaves from the water and pat them dry with a paper towel or clean cloth. Sprinkle each leaf with a pinch of salt and mix the remaining spices in with your meat or mushroom filling.
Lay the cabbage out flat on a plate and place one tablespoon of ricotta cheese on the cabbage. Add half of the meat and roll. You may either fold both ends or leave them open according to preference. Remember, the tighter you roll the cabbage, the nicer it will look.
You may pin the cabbage together with a toothpick if desired.
PIZZA CASSEROLE:

1 (14 oz.) can pizza sauce
1 (4-6 oz.) can mushrooms and liquid
1/4 tsp. garlic powder
1 1/2 cup. uncooked macaroni
3 oz. pepperoni slices
1 cup. water
2 cup. Mozzarella cheese, shredded
METHOD:
Place all ingredients except cheese into 2 quart casserole. Cook on high in microwave for 17-20 minutes, stirring halfway through. When done, put the cheese on top and let set until melted. Stir cheese in.

MAAK DAN SO:
Klits eier, melk en olie saam.

GAARMAAK METODE:

DIE FRIKKADELLE:
Week die brood in die karringmelk en meng dit met die res van die
frikkadelbestandele, behalwe die koekmeelblom. Vorm frikkadelle, rol dit in die koekmeelblom en pak dit lossies in ‘n oondskottel met ‘n deksel. Voorverhit die oond tot 190° C ( 375° F )
DIE SOUS:
Verhit die margarine in ‘n kastrol en die braai die ui daarin tot sag. Meng al ander bestanddele, behalwe die piesangs, en roer by die uie. Snipper nou twee van die piesangs en roer dit by die sous. Laat die sous ‘n paar minute prut tot die piesangs sag is. Sny die ander 4 piesangs in skywe en versprei oor die frikkadelle in die oondskottel. Giet die sous bo-oor, bedek en bak 1,5 – 2 uur tot gaar.
Lewer 6 porsies.
Sit voor met rys, klapper (opsioneel) en mengelslaai.
ALTERNATIEWE GAARMAAKMETODE: [Mikrogolf]
MIKROGOLF:
Die frikkadelle:
Net soos vir die oond, maar voeg 5 ml paprika by die koekmeelblom waarin die frikkadelle gerol word. Mikrogolf die frikkadelle 10 minute onbedek by 100% krag. Hergroepeer die frikkadelle na die eerste 6 minute. Sorg dat die buitenste frikkadelle
nou in die middel is, en andersom.
Die sous:
Plaas die margarien en uie in ‘n groot glasbak en mikrogolf 5 minute onbedek by 100% krag. Meng die res van die sousbe-standdele, behalwe die piesangs, en roer by die uiemengsel. Sny 2 van die piesangs in skyfies en voeg by die sous. Mikrogolf 7 minute by 100% krag. Roere na elke 2 minute.
Sny die ander 4 piesang in skyfies en versprei oor die frikkadelle. Giet die sous oor, bedek en mikrogolf 10 minute by 50% krag en daarna 5 minuteonbedek by 100% krag.

SO MAAK JY:
1.Frikkadelle Meng al die bestanddele en vorm 24 klein frikkadelletjies. Hou dit in die koelkas.
2. Sous
Meng al die bestanddele in ’n glasbak en mikrogolf ’n minuut.
3.Plaas 12 frikkadelle op ’n bord en mikrogolf 2½-3 minute tot net gaar. Herhaal met die res van die frikkadelle.
4. Voeg by die sous en meng deur.
Sit voor op noedels.
BETTIE SE AMANDELA BOBOTIE (MIKROGOLF-BOBOTIE): [ RSG RESEPTE]
Bestanddele:
2 eetlepels margarien of botter
1 ui, opgekap
2 teelepels kerrie
1 teelepel borrie
750g maalvleis
¾ koppie broodkrummels
½ koppie witwyn
2 eetlepels blatjang
sout na smaak
2 eiers
100ml melk
handvol sultanas
2 eetlepels gevlokte amandels
Metode:
Smelt margarien in 'n groot bak vir 'n minuut in mikrogolf op 100%.
Voeg die ui by en maak gaar vir 'n verdere 2 tot 3 minute.
Voeg die maalvleis, speserye en sout by en sit terug in mikrogolf vir 5 minute.
Haal uit en roer goed.
Voeg die res van die bestanddele (behalwe mel, eiers en amandels) by, roer goed, en druk mooi plat in bak.
Klits die melk en eiers saam en bedek die bobotie daarmee, sprinkel die amandels bo-oor, en mikrogolf vir 8 minute.
Bedien met geel rys en slaai.
KOOL- FRIKKADELLE:
Bestanddele:
8 koolblare,
100ml kookwater,
500g maalvleis,
1 gekap ui,

Metode:
Verwyder harde stingelgedeelte van die blare en plaas in water. Mikro 3min op 100%. Dreineer en doop dadelik in koue water. Meng res best behalwe maizena, water en sop. Vorm 8 frikkadelle en rol toe in koolblare. Plaas in n bak. Meng maizena, sop en water en gooi oor. Bedek en mikro 15min op 70%. Bedien met rys en groente.
Porsie 6 tot 8.
BEESVLEIS BROODJIE.
Bestanddele:
60ml blatjang, 3 geskilde gaar wortels in skyfies. 25ml botter, 1 gekap ui, 500g maalvleis, 3 gekap agurkies, 15ml gekap pietersielie, 30ml geroomde peperwortel, 45ml witbroodkrummels, 10ml bistopoeier, 30ml koekmeel, 100ml biefaftreksel, 750g gaar geroomde fyn aartappels.
Metode:
Smeer vierkantig bak van 20 x 20cm. Voer boom met waspapier...
Smeer blatjang op papier. Rangskik wortels op blatjang en hou eenkant. Mikro botter en ui 2min op 100%. Voeg maalvleis, agurkies en p/sielie by en mikro 5min op 100% en roer 2 keer. Roer res best, behalwe aartappel by. Bedek en mikro 10min op 70% en roer net 1 keer. Laat staan 10min. Smeer helfte van aartappel op blatjang. Skep vleismengsel bo op en druk liggies vas. Skep res aartappel bo op. Mikro 15min op 50%. Keer uit en bedien.

CAPE MALAY BOBOTIE:
Bobotie is a favourite meal in South Africa. It is inexpensive to make using a good South African Cape Malay recipe, and exceptionally easy to prepare. Normally people cook bobotie in a regular electric or gas oven, particularly if they are using a traditional South African Cape Malay recipe. But it is even simpler to use a microwave oven to cook your bobotie - and it will take less than half the time. This South African Cape Malay recipe gives the option of using minced beef or lamb, depending on your taste.
INGREDIENTS:
750 g minced beef or lamb (as lean as possible)
1 medium-sized onion, chopped
25 ml butter or sunflower oil
1 thick slice of bread
200 ml milk
15 ml smooth apricot jam
60 ml lemon juice
60 g seedless raisins
30 g slivered almonds
40 ml medium curry powder
salt and pepper
6 lemon or bay leaves
2 eggs
YELLOW RICE:
250 g long-grain rice
600 ml boiling water
2.5 ml turmeric
5 ml salt
50 g yellow sugar
15 g butter
1 stick curled cinnamon
WHAT TO DO:
Start by soaking the bread in half the milk. Heat the butter or oil in a two litre casserole dish on high for a minute. Stir in the onion and cook on high for three minutes. Now add all the ingredients except for the remaining milk, eggs and the leaves. Mix well and cover the casserole with a lid or with plastic film. If using plastic, vent it by making small slits with a knife, or by poking holes in it with a fork. Cook on high for a further ten minutes. Stir after five minutes. When the full ten minutes is up, stir well and season with salt and pepper. Smooth the top of the meat and place the lemon or bay leaves on top. Beat the milk and eggs together and then pour this mixture over the meat. Cook in the microwave uncovered for six minutes, on high.
Serve with yellow rice made by first rinsing the rice in a sieve under cold running water before boiling it in the water in a large casserole or glass dish on high for about 14 minutes, together with the other ingredients. Stir the rice half way through the cooking process. When it is done, remove the stick of cinnamon and stir again.
Traditional chutney, desiccated coconut and chopped nuts will complete this quick and easy South African Cape Malay recipe.
CREAMY BEEF NOODLES:
One of the most easy microwave meals to perfect, this dish can be made in approximately half an hour.
INGREDIENTS:
1 - 1½kg beef mince
1 can of cream of mushroom soup
1 - 4 ounce can of mushroom pieces
4 cups of uncooked noodles
1 ½ tablespoons of mustard
2 ½ cups of water
1 tablespoon of parsley flaked
2 quart glass casserole dish
WHAT TO DO:
You will first need to place your beef inside your casserole pan, breaking it up with a fork as best you can and distributing evenly along the bottom. As with other easy microwave meals, put your casserole dish in the microwave for 6-8 minutes to cook the meat. Drain as much fat out of the casserole pan as possible.
Stir the meat around again with a whisk or another large utensil to help crumble the meat even further. Add your remaining ingredients to the casserole pan, mixing them with the hamburger meat until distributed evenly throughout the mixture. Cover your dish and microwave the concoction for 15-17 minutes until the noodles are tender, remembering to stir occasionally throughout the process. Let cool to a tolerable level before serving.
MANGO MEAT LOAF: [EASY MICROWAVE MEALS]
1 - 1½kg lean ground beef
1 Cup chopped mango
1 cup bread crumbs
1 egg
1 onion, grated
salt and pepper to taste
WHAT TO DO:
Combine all ingredients in a bowl and combine together with your hands. Form into a loaf and place in a glass loaf pan. Cover with microwave safe waxed paper and cook in the microwave for 15-20 minutes or until meat thermometer reads 160 degrees.
MICRO COOKED MUSHROOM PATTIES: [EASY MICROWAVE MEALS]
1/4 C of cornstarch
2- 1/2 Cups beef broth
1 (6 oz.) jar of sliced mushrooms
4 tsp Worcestershire sauce
1 tsp dried bail
1 egg
1/2 Cup bread crumbs
1 onion, grated
1/2 tsp season salt
1/4 tsp pepper
1- 1/2kg ground beef
WHAT TO DO:
Blend together cornstarch and beef broth in a microwave safe casserole dish. Stir in mushrooms, Worcestershire sauce and basil. In a separate bowl, blend together and mix together egg, bread crumbs, onion, salt and pepper. Add ground beef to bread crumb mixture. Mix together until you can form into 6 patties and place in the microwave safe casserole dish. Microwave patties on high for 6-10 minutes or until patties are cooked through. Halfway through cooking turn patties around.
