1,5 kg Lamsboud
2 Snye bruinbrood, gekrummel
15 ml Bruinsuiker
10 ml Gekapte vars roosmaryn of 3 ml droë.
30 – 45 ml Franse aanmaak mostert
Sout en peper na smaak
45 ml Gekapte ui
30 ml Brandewyn
15 ml Gesmelte botter
Druk lamsboud met papierhanddoek droog.
Meng die res van die bestanddele en druk dit teen oppervlak van boud vas.
Plaas in ‘n baksakkie of bedekte oondskottel en mikrogolf vir 24 – 33 minute op volle krag. {HOOG}
Die gaarmaaktyd moet aangepas word by die graad van gaarheid wat verlang word.
[8 – 11 minute per 500g]
Beskerm die been met ‘n repie foelie vir die helfte van die gaarmaaktyd.
Laat staan 15 minute en sit voor.

2 knoffelhuisies in repe gesny
5ml appelkooskonfyt
Sout na smaak
Swart en wit peper na smaak
Goeie knypie vars of droe roosmaryn
5ml botter
250ml wit wyn
25ml kappertjiesaad
125ml room
Droog vleis goed af met kombuispapier.
Maak snitte in vleis met skerp mes en druk die knoffel repe in elke snit.
Mikrogolf appelkooskonfyt vir 10sekondes op hoog tot sag en verf oor die vleis.
Strooi sout, pepers e roosmaryn oor die vleis.
Verhit die ruineerbak 8min op hoog, voeg botter by en mikrogolf vir 3min op hoog.
Plaas vleis in bak en mikrogolf 2min op hoog.
Draai die vleis om en mikrogolf 2 in op hoog.
Stel oond op laag en mikrogolf vleis 50min – draai na 25min om.
Giet wyn oor vleis en mikrogolf nog 50min op laag – draai na 25 min om.
Voeg kappertjiesaad en room 15min voor einde van gaarmaaktd by.
Laat vleis 30min in bruineerbak staan en sit dit dan voor.
MICROWAVE MUTTON CURRY:

1 kg mutton (boneless cubes)
6 cardamoms
1 bay-leaf
5/6 cup oil
2g saffron
3tbsp. Garlic paste
1 boiled egg
4 cinnamon
8 cloves
1/2 cup yoghurt
1/2 tsp black pepper
3tbsp. Ginger paste
3 tbsp. Green chilli paste
Salt to taste
■Heat oil, add cinnamon, cardamom, cloves and bay leaf.
■When brown put ginger, garlic, green chilli paste.
■Saute for a few minutes and add yoghurt and mutton cubes.
■Put it in a glass dish, cover it and micro it for 10 minutes and then stand it for 5 minutes.
■When meat is tender, add salt, pepper and saffron and micro it further for 3-4 minutes. Stand it for another minute and serve.
■To serve garnish with quartered boiled egg and mint.
■A squeeze of lemon juice will greatly enhance the taste. (For chicken curry use chicken instead of mutton).
MICROWAVE MUTTON CHOPS:

8 pieces lamb chops
3/4 tsp. garlic paste
1/2 cup yoghurt
1 tsp. aniseed, red chilli powder
5 cloves
3 1/2 tbsp. oil
1 tbsp. lemon juice, ginger paste
2 tsp. gram flour
a small piece of raw papaya
1/2 tsp. black cardamom
1/4 tsp. black pepper
Salt to taste
■Flatten the chops with a hammer.
■Rub ginger-garlic paste and keep aside.
■Dry roast the' besan' in a pan till brown. Sprinkle it on the chops.
■Beat the curd in a bowl and keep aside.
■Grate raw papaya and rub well on meat.
■Add yoghurt and remaining ingredients, mix well.
■Add little oil to it. Marinate the mutton in this marinade for one hour.
■Fry the chops for about 5 minutes in a pan with 1 tbsp oil. and then transfer to the microwave.
■Cover, sprinkle with a little water and micro them for 6 minutes.
Stand them for another 3 minutes and serve with onions, mint and a dash of lemon juice.

750g dikrib in blokkies gesny
1 groot ui gekap
15 ml Kerrie
5 ml borrie
10 ml fyn gemmer
3 knoffelhuisies, fyngemaak
40 ml olie
4 gaar aartappels gehalveer
1 groot tamatie gekap
12,5 ml suurlemoensap
40 ml sultanas
50 ml bladjang
Marineer vleis, ui, Kerrie, borrie, gemmer en knoffel in 20 ml olie.
Verhit verbruiningspan vir 8 minute op volle krag.
Voeg die res van die olie by vleismengsel en verbruin vir 2 minute op hoog.
Roer deur en kook vir nog 8 minute op volle krag.
Voeg die res van die bestanddele by, bedek en kook nog vir 15 minute teen 50%
Krag [medium/simmer].
Roer deur en toets vleis vir sagtheid.
Indien nodig kook langer teen 50% krag tot vleis sag is.
As jy nie verbruiningsbak het nie, gebruik 'n baksakkie om jou vleis te verbruin en volg dan die resep verder.
LAMB CURRY:

500gm lamb leg chops, cutlets or neck chops
¼ cup vinegar
1 TBS soy sauce
1TBS oil
½ teaspoon chilli powder
2 teaspoons curry powder
1 clove crushed garlic
1 teaspoon minced ginger
2 TBS tomato paste
¾ cup water
1 beef stock cube
¼ cup flour
1 400gm can diced tomatoes
1 400gm can chickpeas, drained
¾ cup frozen green beans
1 onion, diced
Microwave on medium-low for 40-45 mins, covered.
Serve with jasmine or basmati rice.

250g lamslewer, skoongemaak
25ml gegeurde meelblom
12,5ml olie
12,5ml botter
1½ ui in dun skywe gesny
7,5ml souspoeier
Knippie droë gemengde kruie
60ml warm biefaftreksel
60ml rooiwyn
Sny lewer in dun skywe en druk droog.
Doop in gegeurde meel.
Voorverhit verbruiningsbak vir 8 minute op volle krag.
Plaas olie en botter in bak, voeg ui en lewer by.
Mikrogolf vir 1 minuut op volle krag.
Roer en mikrogolf nog 3 – 4 minute op volle krag tot die lewer net gaar is, roer ‘n paar keer tydens gaarmaak.
Maak souspoeier met bietjie water aan.
Voeg kruie, aftreksel en rooiwyn by en giet oor die lewer.
Mikrogolf vir 2 minute op volle krag tot sous verdik het.
Sit voor.
SWEET AND SOUR LAMB CHOPS:
8 oz. pineapple chunks, drained (reserve juice)
1/4 cup. packed brown sugar
1/4 cup. cider vinegar
2 tbsp. cornstarch
1 tbsp. soy sauce
2 carrots, thinly sliced
1 lg. green pepper, cut into 1 inch pieces
4 lamb rib chops, about 1 1/2 inches thick
1. Mix pineapple juice, brown sugar, vinegar, cornstarch and soy sauce in 4 cup measure. Stir in carrots, green p...epper and pineapple. Microwave at High (100%) until thickened, 3-7 minutes, stirring after half the cooking time. Set aside.
2. Preheat 10 inch browning dish at High (100%) 5 minutes. Place lamb chops on browning dish. Microwave on High 1 minute. Turn chops over. Microwave at High 1 minute. Pour sauce over lamb chops; cover.
3. Microwave at Medium-High (70%) until lamb chops are desired doneness, 13 to 23 minutes. Rearrange lamb chops and stir sauce after half the cooking time. Serve with rice. Serves 4.
FRENCH ONION LAMB CHOPS/CHICKEN PORTIONS:
A quick and easy meal the whole family will love!
(Serves 4 - 6)
1 kg lamb chops (or as much as you prefer)
2 packets French onion soup (powder)
(You can buy salt reduced French onion soup if you prefer!)
4 Medium Potatoes, washed and cut into 1 cm slices
Instructions
Empty the DRY soup powder into any plastic bag. Put the potato slices into the bag and coat the potatoes with the soup powder. Put the potato slices in the Medium bowl. Put the Lamb Chops into the bag and coat the Chops with the Soup Powder. Put the chops onto the potatoes.
Cover and cook for 1½ hours at 180 ºC
Or Microwave it for 35 – 45 minutes on Medium High (70%).
Serve with Apple Cider Carrots.
TADITIONAL IRISH STEW:
2 lbs. lamb for stew
1 (1 1/2 oz.) pkg. brown gravy mix with Mushrooms
1 cup. water
4 med. potatoes, peeled & cut into eighths
4 med. onions, quartered
Place lamb in 3 quart microproof casserole. Stir gravy mix into water. Pour over lamb. Cover with casserole lid and cook on 70 for 50 minutes, stirring once during cooking time. Stir in vegetables until well coated with gravy. Cover and cook on 50, 40 to 50 minutes, or until vegetables and lamb are tender. Let stand 5 minutes before serving. Serves 4 to 6.

Roer dit gedurende dié tyd. Spoel die voedselverwerker uit met die 50 ml water en voeg die sout daarby. Voeg die soutwater by die speserye.

Lamb's mild taste lets robust Middle Eastern ingredients like pistachios and saffron come through.
What You Need
170g garlic-herb couscous
1/3 cup pistachio nuts, shells removed
1½ Tbsp lemon-pepper seasoning salt
1 Tbsp dried thyme
1 tsp sugar
1 tsp ground cardamom
1 tsp ground turmeric
½ tsp saffron threads, crushed
1 1/4 lb boneless leg of lamb, cut into cubes
1 c onion, chopped
2 tsp garlic, minced
1 Tbsp fresh ginger, minced
½ cop raisins
2 cups fresh or canned tomatoes, chopped
Method
Combine couscous spice bag an and 1 1/4 cup warm water in a microwavable bowl. Cover tightly and cook on high for 6 to 7 minutes or until simmering. Remove and stir in couscous and pistachios. Cover and let stand 8 minutes. Meanwhile, in a microwavable dish, mix lemon-pepper, thyme, sugar, cardamom, turmeric, and saffron. Add lamb and toss to coat. Mix in onions, garlic, and ginger. Cook on high for 5 to 6 minutes or until vegetables are soft, stirring once halfway through. Stir in raisins and tomatoes, cover tightly with microwave-safe plastic wrap, and cook on high for 5 to 7 minutes or until lamb is no longer pink. Serve with couscous.

15 ml olive oil
1 garlic clove, finely chopped
2,5 ml steak & chop spice
1 kg lamb chops
250 ml tomato sauce
125 ml soy sauce
1 medium onion, finely sliced into rings
5 ml dried oregano
WHAT TO DO:
Mix oil, garlic and meat spice. Rub chops over mixture. Arrange chops in Large Oval Roaster and bake for 20 minutes at 180ºC.
Mix tomato sauce, soy sauce, onion rings and oregano. Pour mixture over chops and bake until the onions has caramelised and a thick, dark sauce has formed. Serve with mash and a green salad.
MY WENK:
Maak in jou konveksie-oond gaar op 180°C vir ongeveer 15 - 20 minute afhangende van hoe gaar jy van jou vleis hou. Hoe langer dit bak hoe droeër is die vleis. Onthou daar is 5 minute staantyd waarin die vleis ook nog verder gaar word.
As jou mikrogolf 'n grill het, dan doen dit op die gewone mikrogolf manier vir 25 minute op Hoog en grill dit dan effens bruin vir ongeveer 3 - 5 minute.

500gm lamb leg chops, cutlets or neck chops
¼ cup vinegar
1 TBS soy sauce
1TBS oil
½ teaspoon chilli powder
2 teaspoons curry powder
1 clove crushed garlic
1 teaspoon minced ginger
2 TBS tomato paste
¾ cup water
1 beef stock cube
¼ cup flour
1 400gm can diced tomatoes
1 400gm can chickpeas, drained
¾ cup frozen green beans
1 onion, diced
Microwave on medium-low for 40-45 mins, covered.
Serve with jasmine or basmati rice.

250g lamslewer, skoongemaak
25ml gegeurde meelblom
12,5ml olie
12,5ml botter
1½ ui in dun skywe gesny
7,5ml souspoeier
Knippie droë gemengde kruie
60ml warm biefaftreksel
60ml rooiwyn
Sny lewer in dun skywe en druk droog.
Doop in gegeurde meel.
Voorverhit verbruiningsbak vir 8 minute op volle krag.
Plaas olie en botter in bak, voeg ui en lewer by.
Mikrogolf vir 1 minuut op volle krag.
Roer en mikrogolf nog 3 – 4 minute op volle krag tot die lewer net gaar is, roer ‘n paar keer tydens gaarmaak.
Maak souspoeier met bietjie water aan.
Voeg kruie, aftreksel en rooiwyn by en giet oor die lewer.
Mikrogolf vir 2 minute op volle krag tot sous verdik het.
Sit voor.
SWEET AND SOUR LAMB CHOPS:
8 oz. pineapple chunks, drained (reserve juice)
1/4 cup. packed brown sugar
1/4 cup. cider vinegar
2 tbsp. cornstarch
1 tbsp. soy sauce
2 carrots, thinly sliced
1 lg. green pepper, cut into 1 inch pieces
4 lamb rib chops, about 1 1/2 inches thick
1. Mix pineapple juice, brown sugar, vinegar, cornstarch and soy sauce in 4 cup measure. Stir in carrots, green p...epper and pineapple. Microwave at High (100%) until thickened, 3-7 minutes, stirring after half the cooking time. Set aside.
2. Preheat 10 inch browning dish at High (100%) 5 minutes. Place lamb chops on browning dish. Microwave on High 1 minute. Turn chops over. Microwave at High 1 minute. Pour sauce over lamb chops; cover.
3. Microwave at Medium-High (70%) until lamb chops are desired doneness, 13 to 23 minutes. Rearrange lamb chops and stir sauce after half the cooking time. Serve with rice. Serves 4.
FRENCH ONION LAMB CHOPS/CHICKEN PORTIONS:
A quick and easy meal the whole family will love!
(Serves 4 - 6)
1 kg lamb chops (or as much as you prefer)
2 packets French onion soup (powder)
(You can buy salt reduced French onion soup if you prefer!)
4 Medium Potatoes, washed and cut into 1 cm slices
Instructions
Empty the DRY soup powder into any plastic bag. Put the potato slices into the bag and coat the potatoes with the soup powder. Put the potato slices in the Medium bowl. Put the Lamb Chops into the bag and coat the Chops with the Soup Powder. Put the chops onto the potatoes.
Cover and cook for 1½ hours at 180 ºC
Or Microwave it for 35 – 45 minutes on Medium High (70%).
Serve with Apple Cider Carrots.
TADITIONAL IRISH STEW:
2 lbs. lamb for stew
1 (1 1/2 oz.) pkg. brown gravy mix with Mushrooms
1 cup. water
4 med. potatoes, peeled & cut into eighths
4 med. onions, quartered
Place lamb in 3 quart microproof casserole. Stir gravy mix into water. Pour over lamb. Cover with casserole lid and cook on 70 for 50 minutes, stirring once during cooking time. Stir in vegetables until well coated with gravy. Cover and cook on 50, 40 to 50 minutes, or until vegetables and lamb are tender. Let stand 5 minutes before serving. Serves 4 to 6.
WATERBLOMMETJIEBREDIE :
* 30 ml olie;
1 kg skaapboudtjops;
2 groot uie, fyn gekap;
2 knoffelhuisies, gekneus;
410 g waterblommetjies (1 blik);
2 groot aartappels, geskil en in blokkies gesny;
8 suringblare, opsioneel;
1 Granny Smith-appel, geskil en gerasper;
10 ml rissiesous;
3 ml fyn gemmer;
5 ml bruinsuiker;
1 lourierblaar;
200 ml droë witwyn;
250 ml beesvleisaftreksel;
'n paar druppels verbruiner;
sout en varsgemaalde swartpeper.
* Verhit die olie in 'n swaarboompan, voeg die vleis by en verbruin dit alkante. Voeg die uie en knoffel by en soteer dit totdat die uie sag en deurskynend is. Skep die vleismengsel in 'n oondbak en plaas die waterblommetjies, aartappels, suringblare en gerasperde appel in lae bo-op. Meng die res van die bestanddele en giet dit oor die vleis. Plaas die deksel op en mikrogolf dit eers 15 min. teen 70 persent krag en dan sowat 1 uur teen 50 persent krag totdat die vleis sag is.LAMKERRIE:
* 3 ml saffraan;
30 ml kookwater;
2 middelslag uie
15 ml varsgekapte gemmer;
10 ml knoffel;
25 g rou kasjoeneute (62,5 ml); of
25 g gepelde amandels (40 ml);
4 gedroogde brandrissies, ontpit
125 ml water;
10 ml gemaalde koljander;
5 ml gemaalde komyn;
1 ml fyn kaneel;
1 ml gemaalde kardemom;
1 ml fyn kruinaeltjies;
1 ml verpoeierde saffraan;
15 ml ghee (botter wat verhelder is deur dit 15 tot 20 min. lank te kook om alle onsuiwerhede en sout te verwyder) of botter;
30 ml olie;
50 ml water;
10 ml sout;
1 kg ontbeende lamsboud of-blad, in blokkies gesny;
125 ml natuurlike joghurt;
50 ml vars, gekapte koljanderblare.
* Week die saffraan in die kookwater. Kap 1 ui, die gemmer, knoffel, kasjoeneute of amandels en brandrissels met die metaallem van 'n voedselverwerker op. Voeg die water by en verwerk dit teen hoë spoed totdat die bestanddele fyn gemaal is. Voeg die koljander, komyn, kaneel, kardamom en kruinaeltjies by en verwerk dit 'n paar sekondes lank. Sny die ander ui in skywe. Mikrogolf die ghee of botter 2 min. lank teen 100 persent krag. Roer die gemaalde speserye by en mikrogolf dit sowat 4 min. lank teen 100 persent krag. Roer dit gedurende dié tyd. Spoel die voedselverwerker uit met die 50 ml water en voeg die sout daarby. Voeg die soutwater by die speserye.
Mikrogolf dit sowat 5 min. lank teen 100 persent krag. Voeg die vleisblokkies by en roer dit goed sodat die speserymengsel dit alkante bedek. Mikrogolf dit sowat 8 min. lank teen 100 persent krag.
Roer dit gedurende dié tyd. Roer die saffraan en joghurt by. Bedek dit en mikrogolf dit sowat 45 min. teen 50 persent krag totdat die vleis sag is. Roer dit af en toe om. Strooi die vars koljanderblare
oor, bedek dit weer en mikrogolf dit nog sowat 5 min. teen 50 persent krag. Sit warm voor saam met rys.

250ml wit wyn
125ml room
Droog vleis goed af met kombuispapier. Maak snitte in vleis met skerp mes en druk die knoffel repe in elke snit. Mikrogolf appelkooskonfyt vir 10 sekondes op hoog tot sag en verf oor die vleis. Strooi sout, pepers e roosmaryn oor die vleis. Verhit die bruinneerbak 8min op hoog, voeg botter by en mikrogolf vir 3 min op hoog. Plaas vleis in bak en mikrogolf 2 min op hoog. Draai die vleis om en mikrogolf 2 in op hoog. Stel oond op laag en mikrogolf vleis 50 min – draai na 25 min om. Giet wyn oor vleis en mikrogolf nog 50 min op laag – draai na 25 min om. Voeg room 15 min voor einde van gaarmaak tyd by. Laat vleis 30 min in bruinneerbak staan en sit dit dan voor.
LAMB WITH PISTACHIO COUSCOUS:

Lamb's mild taste lets robust Middle Eastern ingredients like pistachios and saffron come through.
What You Need
170g garlic-herb couscous
1/3 cup pistachio nuts, shells removed
1½ Tbsp lemon-pepper seasoning salt
1 Tbsp dried thyme
1 tsp sugar
1 tsp ground cardamom
1 tsp ground turmeric
½ tsp saffron threads, crushed
1 1/4 lb boneless leg of lamb, cut into cubes
1 c onion, chopped
2 tsp garlic, minced
1 Tbsp fresh ginger, minced
½ cop raisins
2 cups fresh or canned tomatoes, chopped
Method
Combine couscous spice bag an and 1 1/4 cup warm water in a microwavable bowl. Cover tightly and cook on high for 6 to 7 minutes or until simmering. Remove and stir in couscous and pistachios. Cover and let stand 8 minutes. Meanwhile, in a microwavable dish, mix lemon-pepper, thyme, sugar, cardamom, turmeric, and saffron. Add lamb and toss to coat. Mix in onions, garlic, and ginger. Cook on high for 5 to 6 minutes or until vegetables are soft, stirring once halfway through. Stir in raisins and tomatoes, cover tightly with microwave-safe plastic wrap, and cook on high for 5 to 7 minutes or until lamb is no longer pink. Serve with couscous.
MICROWAVE MUTTON CHOPS:
8-10 pcs lamb chops
3/4 tsp ginger-garlic paste
1 cup yoghurt
1tsp aniseed
1tsp red chilli powder
6 cloves
2 tbsp. oil
1tbsp. lemon juice
1tsp ginger paste
2 tsp. gram flour
small piece of papaya
1tsp. black cardamom
1/4 tsp. black pepper
Salt acc to your taste
Method:
Flatten the chops.
Rub ginger-garlic paste to chops and keep aside.
Roast the dry gram flour in a pan till brown. Sprinkle it on the chops.
Beat the curd in a bowl and keep aside.
Grate raw papaya and rub well on meat.
Add yoghurt and remaining ingredients and mix well.
Add little oil to it. Marinate the mutton in this marinade for one hour.
Fry the chops for 5 minutes in a pan with 1 tbsp oil. Now transfer them to the microwave.
Cover them and sprinkle with a little water and micro them for 5-6 minutes.
Stand them for another 3 minutes and serve it hot with onions, mint and a dash of lemon juice.
SOY SAUCE LAMB CHOPS: [ARGILLA]
15 ml olive oil
1 garlic clove, finely chopped
2,5 ml steak & chop spice
1 kg lamb chops
250 ml tomato sauce
125 ml soy sauce
1 medium onion, finely sliced into rings
5 ml dried oregano
WHAT TO DO:
Mix oil, garlic and meat spice. Rub chops over mixture. Arrange chops in Large Oval Roaster and bake for 20 minutes at 180ºC.
Mix tomato sauce, soy sauce, onion rings and oregano. Pour mixture over chops and bake until the onions has caramelised and a thick, dark sauce has formed. Serve with mash and a green salad.
MY WENK:
Maak in jou konveksie-oond gaar op 180°C vir ongeveer 15 - 20 minute afhangende van hoe gaar jy van jou vleis hou. Hoe langer dit bak hoe droeër is die vleis. Onthou daar is 5 minute staantyd waarin die vleis ook nog verder gaar word.
As jou mikrogolf 'n grill het, dan doen dit op die gewone mikrogolf manier vir 25 minute op Hoog en grill dit dan effens bruin vir ongeveer 3 - 5 minute.
