These open-face tuna sandwiches have a refreshing twist using mango, and are a cinch to make anytime.
1 can (6 oz.) tuna, drained
1/2 cup finely chopped mango
3 tablespoons mayonnaise
2 slices bread
2 slices Swiss cheese
In medium bowl, combine tuna, mango and mayonnaise.
Place 2 slices of bread over paper towel on microwave-safe dish.
Divide mixture evenly between bread slices.
Place cheese slices over tuna mixture.
Microwave on HIGH, 30-45 seconds or until cheese begins to melt.
Serve.
Makes 2 sandwiches.
Ingredient Tip
Use breads such as marbled rye or slices of pumpernickel.
Or, if bread isn’t handy, top over rolls.
For a change, try diff erent types of cheese cheddar. .

1 paper towel
Ketchup and/or mustard (opt.)
Wrap paper towel around hot dog and place in center of microwave.
After closing microwave door, cook on high for 1 minute.
Remove from microwave; remove paper towel.
Place on bun, season to taste, now eat!

For 4 servings:
■3 Tbs. unsalted butter
■2 slices of bacon, cut into 1 inch pieces
■2 onions, quartered and cut into 1/8 inch pieces
■1 tsp. caraway seeds
■3 lbs. sauerkraut, drained
■1 cup beer
■2 lbs. cooked kielbasa sausage, pricked with a fork or any other cooked sausage to your taste.
Combine butter and bacon in a microwave safe casserole dish.
Microwave uncovered 1 minute on high, or until butter is melted.
Stir in onions and caraway seeds.
Cover and microwave 5 minutes on high, or until onions are softened.
Add sauerkraut and beer and stir with a fork to separate sauerkraut.
Cover and microwave on high 20 minutes, or until most of the liquid is absorbed.
Bury kielbasa into sauerkraut mixture.
Cover and microwave 15 minutes on high or until hot.

Boiling water
1 cup frozen mixed vegetables
½ small onion, diced
400g can of diced tomatoes
2 tablespoons of breakfast marmalade or fruit chutney
1 teaspoon all purpose seasoning
Rice, cous cous, pasta or instant mash to serve [even pap will do]
Prepare rice, cous cous or instant mash according to instructions on packet.
Put sausages in a microwave-safe bowl and pour boiling water over sausages until completely covered.
Cook in microwave uncovered on high for 9 minutes.
Drain the water, remove skin from sausages and cut into bite sized pieces.
Add mixed vegetables, tomatoes, marmalade and all purpose seasoning and mix well.
Cook in microwave on high for 10 minutes.
Serve with rice, cous cous or instant mash, or eat stew by itself.

In a Casserole, combine Beef Mix, garlic, mushrooms, soup and catsup.
Microwave on High for 10-15 minutes, stirring once or twice, until very hot, but not boiling.

400g tin chopped peeled tomatoes
splash of water or chicken stock (60-100 ml)
1 small bunch coriander, chopped
Microwave rice for 90 seconds as per packet instructions.

Add the capsicum, cayenne, paprika and rice, tomatoes and chicken stock.
Cook for another 8 minutes on high.

Prepare dinner as directed on package. Add cottage cheese and onion; mix well. Cover bottom of 10 x 6 inch baking dish with sausage; top with dinner mixture and remaining sausage. Bake at 350 degrees for 20 minutes.

• Drain the water, remove skin from sausages and cut into bite sized pieces.
• Add mixed vegetables, tomatoes, marmalade and all purpose seasoning and mix well.
• Cook in microwave on high for 10 minutes.
• Serve with rice, cous cous or instant mash, or eat stew by itself.
