MICROWAVE RICE CASSEROLE:

1 stick butter or margarine
1 chopped onion
1 can onion soup
1 can water
1 lg. can mushrooms (save liquid)
1 cup. grain rice (not instant)
Saute rice in butter.
Place in 2 quart casserole.
Add onion soup, water and can of mushroom with liquid.
Sprinkle rice over mixture.
Do Not Mix.
Cover and microwave on high for 40 minutes.
CHEESY RICE BROCCOLI:

1-10oz frozen chopped broccoli [small pct broccoli]
3/4 cup. water
1 ½ cup. minute rice
1 small jar Melrose cheese spread
In bowl bring water & broccoli to boil in microwave (about 2 min.).
Add rice, stir, cover
Cook on 80% power for 4 min.
Add cheese and let sit for 5 min.covered.

Black pepper
Parmesan cheese
Heat butter and oil in deep pie dish, uncovered at 100% for 2 minutes.
Add onions and cook 4 more minutes.
Add rice and stir.
Cook, uncovered for 4 more minutes.
Stir in broth.
Cook uncovered at 100% for 9 minutes.
Stir well and cook for 9 minutes more.
Remove from oven.
Let stand, uncovered for 5 minutes to let rice absorb remaining liquid.
Stir in salt, pepper and Parmesan cheese.
Try adding fresh herbs or substituting canned tomatoes for half of the chicken broth.

All heating is done at 100%, uncovered.
Heat butter and oil in casserole, the shallower the better, for 2 minutes. Add leeks, salt and pepper. Heat for 2 minutes. Stir in rice and broth. Cook for 13 minutes. Add wine, stir well, cook for 6 minutes. Add carrots, cook for 6 minutes. Taste for doneness. If rice is still hard, cook another couple of minutes. Remove from microwave, add zucchini, asparagus and sugar snaps. Stir well. Adjust seasoning. Let stand 5 minutes, stirring several times. Beat in 1/2 cup Ricotta. Add spinach. Serve topped with a dollop of Ricotta and sprinkled with chives and parsley.
CARROT RISSOTO:

Ingredients
• 1 can or bottle (12 to 15 oz.) carrot juice, plus enough water to equal 2 Cups.
• 1 14.5-oz. can vegetable broth
• 1/2 Cup. dry white wine
• 1 1/4 C. water
• 1 Tbs. olive oil
• 2 Cup. shredded carrots
• 1/2 sm. onion, finely chopped
• 2 Cups. Arborio rice or medium-grain rice
• 1/3 Cup. freshly grated Parmesan cheese
• 3/4 tsp. salt
• 1/4 tsp. pepper
• 2 Tbs. coarsely chopped fresh mint or parsley (optional)
Directions
In saucepan, heat carrot juice, broth, wine and water to boiling over high heat. Reduce heat to low to maintain simmer; cover.
In a microwave-safe casserole, combine oil, carrots and onion. Cook, uncovered in microwave oven on high until onion has softened, about 2 minutes. Add rice and stir until rice grains are opaque. Cook on high 1 minute.
Stir hot liquid into rice mixture. Cover casserole with lid or vented plastic wrap and cook on Medium (50% power) until most of the liquid has been absorbed and rice is tender but still firm, 15 to 20 minutes. Stir in Parmesan, salt and pepper. Sprinkle with mint, if you like.
PULAO: [SAVORY RICE WITH PEAS]
Ingredients:
• 1 Cup basmati rice
• 1/2 Cup peas
• 1 tsp Cumin seeds
• Salt to taste
• 2 Green chilies
• 2 tsp Oil
• 2 Cups water
How to make Microwave Pulao:
Clean rice and soak in water for 30 minutes.Don’t drain this water.
In a microwave safe bowl, cook the rice, along with peas and water, for 10 minutes.Stir once in between, to ensure uniform cooking.
Keep aside.
In a different bowl, mix oil, cumin seeds and green chilies. Microwave at 165 degree F, for 30 seconds.
Add rice and salt. Mix well and microwave high at 165 degree F for another 30 seconds.
Microwave Pulao is ready.

Heat broth and seasoning packet from couscous in the microwave on HIGH for 3 to 5 minutes or until broth begins to boil. Place couscous in a large bowl, and stir in broth mixture. Cover and let stand 5 minutes.
Fluff couscous with a fork; stir in chicken and the remaining 6 ingredients. Serve warm or cold.

3.Cook on high power, covered 18 - 20 mins (depending on power), stirring every 5 minutes or so.
4.Stand 5 minutes.
5.To reheat; From cold 5 - 10 minutes.
CARROT PEPPER RICE: [EASY MICROWAVE RECIPES]
INGREDIENTS:
1 cup rice (uncooked)
3 tbsp oil
1 onion
1 capsicum
1 carrot
1 tsp salt,
1/2 tsp pepper powder
1/2 tsp soy sauce
WHAT TO DO:
Soak rice for 15 to 20 minutes. Meanwhile chop onions, carrots and capsicum.
In a large microwave safe bowl (take the largest you have) mix oil, capsicum and carrot and microwave for 3 minutes. (I found the rice slightly oily so next time I will reduce the oil by a tablespoon)
Drain out all the water from the rice. Add this rice to the vegetables. Pour two cups water, salt, pepper and soy sauce.
Mix a bit and microwave covered for 13 minutes. Stir once in between.
This is what your rice will look like -
Leave untouched for 5 minutes. Mix well and serve hot.

SO MAAK JY:
Voeg 2 kop water by rys en bedek.
Week vir ten minste 20 minute.
Kook vir 5 minute op HOOG en dan 20 minute op laag [defrost].

1 cup rice (Use long grain, Jasmine or Basmati)
1 ½ cups water
1 cup chopped vegetables (fresh or frozen)
1 medium chopped red onion
2 slices bacon, chopped
1 tbsp oil
1 tbsp tomato sauce (ketchup)
1 tbsp soy sauce

Combine all ingredients and microwave for 25 min until tender.

Rys bly ‘n staatmaker vir elke maaltyd. Met soveel verskillende soorte op die mark staan rys sy plek vol. Ek gaan vandag net gewone wit rys kook. Gaan dit bo-op die stoof kook en ook in die mikrogolf.
OP DIE STOOF:
•1 koppie rys is meer as genoeg vir 2 mense.
•bring 2 koppies water en 5 ml sout in ‘n potjie op die stoof tot kooppunt
•gooi jou 1 koppie rys in jou kokende soutwater en sit jou deksel so skuins op.
•na omtrent 20 minute sal jou rys gaar, maar nog ferm wees.
•sit die dekseltjie op en laat dit staan vir 10 minute of as jy ‘n vigiettes (rysstrainer) het, kan jy dit stoom oor water vir ‘n paar minute.
1.WITRYS: 18 – 25 MINUTE
2.BRUINRYS: 30 – 40 MINUTE
3.WILDERYS: 45 – 60 MINUTE
IN DIE MIKROGOLF:
•plaas 2 koppies water, 1 koppie rys en 5 ml sout in ‘n vuurvaste bak
•sit in mikrogolf sonder deksel en mikrogolf vir 13 minute.
•gooi nog 1 koppie water in en mikrogolf vir nog 13 minute
•sit deksel op en mikrogolf vir nog 10 minute.
•roer met vurk sodat die rys mooi los is.

INGREDIENTS:
2 cups long grain rice
3½ cups water or 3½ cups canned broth or 3½ cups homemade stock
1½ teaspoons butter or ½ teaspoons olive oil
salt
WHAT TO DO:
1.Place all ingredients except salt in a large microwave safe bowl.
2.Rice doubles in size during cooking so choose a container large enough to accommodate final product.
3.Microwave uncovered on high for 10 minutes.
4.Then microwave uncovered on medium-low for 15 minutes.
5.Do not stir rice at anytime during cooking process.
6.Season with salt and fluff with a fork before serving.

"This is just so good and so easy. I serve it with BBQ's for a crowd frequently. Servings are approximate, as I usually serve this with other sides. My microwave is 1200w and it takes 15mins."
INGREDIENTS:
1 tablespoon butter
1 onion, chopped
4 shallots, sliced
3 -4 slices bacon, chopped
3 cups chicken stock, very hot
1/4 cup pine nuts
2 cups rice, uncooked
WHAT TO DO:
1.Melt butter in pan, saute onions, shallots, bacon and pine nuts 3-5 minutes.
2.Move to a large glass bowl; add rice and stock.
3.Cook on high power, covered 18 - 20 mins (depending on power), stirring every 5 minutes or so.
4.Stand 5 minutes.
5.To reheat; From cold 5 - 10 minutes.
CARROT PEPPER RICE: [EASY MICROWAVE RECIPES]
INGREDIENTS:
1 cup rice (uncooked)
3 tbsp oil
1 onion
1 capsicum
1 carrot
1 tsp salt,
1/2 tsp pepper powder
1/2 tsp soy sauce
WHAT TO DO:
Soak rice for 15 to 20 minutes. Meanwhile chop onions, carrots and capsicum.
In a large microwave safe bowl (take the largest you have) mix oil, capsicum and carrot and microwave for 3 minutes. (I found the rice slightly oily so next time I will reduce the oil by a tablespoon)
Drain out all the water from the rice. Add this rice to the vegetables. Pour two cups water, salt, pepper and soy sauce.
Mix a bit and microwave covered for 13 minutes. Stir once in between.
This is what your rice will look like -
Leave untouched for 5 minutes. Mix well and serve hot.
