A coffee cup is the perfect vessel for a quick meal such as quiche. It takes only a few ingredients and quick cooking time. (Bill Hogan/Chicago Tribune/MCT)
Results can be tasted in minutes because it's cooked in a micro-wave.
Yield: 1 serving
1 egg
1 1/2 tablespoons milk
Salt
Ground black pepper
1/4 of a bagel (or similar amount of French bread, etc.)
2 teaspoons cream cheese
1/2 slice prosciutto or ham
Fresh thyme leaves or fresh chopped chives
Dijon mustard
1. Beat egg and milk together with a fork in a coffee cup, adding salt and pepper to taste. Tear bread into dime-size pieces; stir in. Add cream cheese; stir in. Tear or cut prosciutto into small pieces; add to mixture. Sprinkle with thyme.
2. Microwave on high until done, about 1 minute 10 seconds. Garnish with mustard and fresh thyme or chives.
CINNAMON ROLL MUG CAKE:
(made in 3 minutes!)

•2 Tbsp applesauce
•1 Tbsp vegetable oil
•1 Tbsp buttermilk
•1/4 tsp vanilla extract
•1/4 cup + 1 Tbsp all-purpose flour
•2 1/2 Tbsp packed light-brown sugar
•3/4 tsp ground cinnamon
•1 dash ground nutmeg (optional)
•1/4 tsp baking powder
•1/8 tsp (scant) salt
•1 Recipe Cream Cheese Icing, recipe follows
Cream Cheese Icing
•1 Tbsp Cream Cheese or Neufchatel Cheese, softened
•2 Tbsp powdered sugar
•1 tsp milk
Directions
•Prepare Cream Cheese Icing according to directions listed, set aside. Combine all ingredients (minus Cream Cheese Icing) in a mug then whisk together with a fork until combine and nearly smooth. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds. Serve warm topped with Cream Cheese Icing.
Cream Cheese Icing
•Combine all ingredients in a small bowl and whisk with a fork until smooth.
BANANA BREAD IN A MUG: [ discovered on Vittles and Bits, Adapted from Mickis Morsels]
Ingredients:
Non-stick cooking spray
3 tbs flour
1 tbs + 1 teas sugar
2 tbs brown sugar
1/8 teas salt
1/8 teas baking powder
1/8 teas baking soda
1 egg
1/4 teas vanilla extract
1 tbs vegetable oil
1 tbs milk
1 ripe banana, mashed
Preparation:
Spray a microwave safe mug with cooking spray.
In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.
Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.
Like all magical things that come out of the microwave, the inside of this will be hotter than the surface of the sun when you first remove it from the microwave. Give it a few minutes.
Seriously, that easy!
This was not the best ever banana bread, and trust me, I know some banana bread. But it’s a great quick fix, I have an overly ripe banana on the counter that I could toss in the freezer or use right now kind of bread. Perfect for a single serving or to impress an unexpected guest.
INSTANT MUG O' MAC & CHEESE IN A MICROWAVE"
1/3 cup pasta
1/2 cup water
1/4 cup 1% milk
1/2 cup shredded cheddar cheese
HOW TO COOK:
Combine the pasta and water in a large mug or bowl. Microwave on high for two minutes, then stir. A lot of times the water will overflow while it heats up. It is OK if this happens. If you don’t want it to overflow just make this in a very large microwaveable bowl. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval. The water should absorb completely and the pasta will be cooked through. If the pasta needs another minute it is okay to add one more teaspoon of water and microwave for another minute. My pasta cooked through in 4 minutes every time, but my microwaves tends to be very powerful.
Remove it from the microwave and stir in the milk and cheese. Microwave for another minute. Stir the cheese thoroughly into the pasta and eat up!

•Cover and microwave on high for 3 minutes or until meat is no longer pink and a thermometer reads 160°; drain.
•Let stand for 3 minutes. Serve with additional ketchup if desired.

COFFEE CUP CHILAQUILES:

HOW TO COOK:
1. Beat egg and milk with a fork in a coffee cup, adding salt and pepper to taste. Add cheddar; stir to coat. Break 3 or 4 tortilla chips into small pieces to fit in the cup; stir into the mixture. Add salsa.
2. Microwave on high until done, about 1 minute, 10 seconds. Garnish with remaining tortilla chips, sour cream, queso fresco and green onion.
CHOCOLATE PEANUT BUTTER MUG CAKE: [TO DIE FOR!!!]
2 tablespoons butter
2 tablespoons peanut butter
1/2 teaspoon vanilla
1 egg
2 tablespoons sugar
2 tablespoons flour
3 tablespoons cocoa powder
1/8 teaspoon salt
1/8 teaspoon baking powder
3 tablespoons chocolate chips
HOW TO MAKE:
Melt the butter in a small dish. Add the peanut butter and mix well.
In the mug, mix together the vanilla, egg, and sugar until well combined. Combine the flour, cocoa, salt, and baking powder and add to the mug. Pour in the peanut butter/butter mixture and mix well. Stir in the chocolate chips. Put in the microwave for 1-2 minutes or until desired doneness is reached (all microwaves are different so you might have to experiment a little. I only do it for about 1 minute). Top with peanut butter pie mousse and hot fudge.
Peanut Butter Pie Mousse
1 tablespoon softened cream cheese
1 tablespoon peanut butter
1/2 teaspoon vanilla
2 tablespoons whipped cream or cool whip
1 tablespoon powdered sugar
Mix together the cream cheese, peanut butter, and vanilla. Fold in the whipped cream. Sift in the powdered sugar (I just used a fork) and fold that in too, trying not to over stir.
Also, I used dark cocoa powder because it happened to be on a lower, more easy to reach shelf at the time. I actually like the regular kind better, but whatever floats your boat.
PEANUT BUTTER MUG CAKE: [LOW FAT]

4 tablespoons all purpose flour
4 tablespoons white granulated sugar
1/4 tsp baking powder
1 egg
3 tablespoons peanut butter
6 tablespoons fat free milk
Directions:
Combine all ingredients in an oversized coffee mug. Whisk well with a small whisk until smooth. If there are flour chunks, use fork to break up chunks. Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don’t want to overcook it or it will become rubbery. You can also make this into two regular sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually. They will likely be done faster (around 1 1/2 minutes)
.BREAKFAST: OMELET IN A MUG:
For a fast, healthy breakfast, it doesn't get any easier than this omelet you can make in a mug.
Ingredients:
1 large egg
2 egg whites
2 tbsp shredded cheddar cheese
1 tbsp diced green bell pepper
Salt and ground black pepper to taste
Cooking spray
Directions:
Combine egg, egg whites, cheddar cheese, bell pepper, salt, and ground pepper in a microwave-safe mug coated with non-stick spray. Microwave on high for 1 minute; stir. Return to microwave and cook until eggs are completely set, 1 to 1 1/2 minutes longer. Sprinkle cheese on top and serve.
MINI MINUTE OMELET:
1 egg
2 ounces cream cheese
chives to taste
dash of salt
HOW TO COOK:
Blend the chives in with room temperature cream cheese, or use purchased cream cheese and chive spread. Beat the egg in a cup. Spray a microwave safe bowl or plate with non stick spray. Add the egg and cook in the microwave for about one minute. Microwaves vary, so take it out when no liquid remains. Spread the cream cheese onto the egg. Sprinkle with salt. Flip the egg into a half circle and serve.
I just added a small serving of cantaloupe cubes and blueberries on the side. (I smeared a bit of cream cheese on the top too, but that is just to be frugal and eat the last little bit in the bowl. It is not necessary by any means.) So easy and fast.
COFFEE CAKE IN A MUG:
No meal is ever complete without something sweet at the end. This treat doubles as dessert and a decadent brunch dish.
Ingredients:
Cake batter:
1 tablespoon softened butter
2 tablespoons white sugar
1/2 beaten egg
2 tablespoons sour cream
2 drops vanilla extract, or more to taste
1/4 cup all-purpose flour
1/8 teaspoon baking powder
Topping:
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon butter
Directions:
Stir softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add flour and baking powder into the mixture; stir until smooth. Mix the topping ingredients in a separate bowl and mash the butter into the mixture with a fork or pastry cutter until mixture is crumbly. Then sprinkle it over the cake batter in the mug. Cook in microwave on high for 1 minute. Then continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.
1 MINUTE BROWNIE IN A MUG:
Ingredients
•1 Tbsp cocoa powder
•1 Tbsp flour
•1 Tbsp brown sugar
•1 Tbsp water
•1 Tbsp canola oil
•a pinch of salt
•ice cream, optional
Instructions
1.In a mug or small microwave safe dish, add the coco powder, flour, sugar, water, oil, and salt.
2.Stir to combine.
3.Microwave for 30 seconds. Serve warm with a scoop of ice cream.
2-MINUTE FRENCH TOAST IN A CUP:
First you need bread. This is pan de mie, which is basically just french for sandwich bread. Your weber white will work fine, or whatever you have on hand. I prefer my french toast soft-ish but if you like a little crunch go for a baguette. It truly does not matter. An old croissant. A nutty multigrain. A pile of tortillas might even work, i’m not kidding. Anyway, you’ll need one or two pieces of bread per cup. I like to make 2 cups at once so I can split an egg, but you can totally make one big cup with more bread and a whole egg. Work with what you’ve got.
Cube your bread.
Get your cup or cups ready. Butter the inside, either rub a pat of butter around, or you can melt the buter in a mircowave and slosh it around. Up to you.
Place the bread in the cup of your choosing. I used two small cups this time because my pesky husband wanted in on the action, but one big cup totally works. About a slice or a slice and a half will do it. Smoosh it down a bit but don’t compact it so much cause you need the liquid to be able to work it’s way in.
Now in a separate cup or ramekin do the following:
-crack and egg into it
-add 3 tablespoons of milk
-sprinkle cinnamon
-if you like your french toast really sweet or vanilla-y, add a single drop of vanilla extract (I don’t do this, but it might make you love it even more)
Mix it all together with a fork.
Pour the mixture into your cup/cups. Smoosh it a little, and give it a minute to soak down into the bread.
Now stick your cup in the microwave. Start with one minute, then add ten seconds at a time until it’s cooked to your liking (no runny eggs). In my microwave that’s 1 minute, 20 seconds.
Mmm, eggy cinammon-y bread. Yes!
Add syrup. You have to have syrup. Or whip cream. But really, syrup.
Eat. Repeat nightly, or morningly.
OMELET IN A MUG:

STICKY DATE PUDDING IN A MUG:
Ingredients
10 x dates, roughly chopped
1½ Tbls boiling water
1/8 tspn bicarb soda
1½ Tbls butter
1½ Tbls brown sugar
1½ Tbls self - raising flour
1/2 x egg beaten
½ Tbls walnuts, roughly chopped
1 x caramel sauce:
1 Tbls butter - extra
1 tspn milk or cream, extra
4 Tbls browns sugar, extra
Method
This recipe is to make 1 mug serving.
*I would recommend making two though so you don’t have to halve an egg*
In a mug place the chopped dates and water. Place in microwave for 50 sec until the dates are softened.
Add the Bicarb soda to the mug and let it sit for a minute and mash roughly with a fork.
Add the butter into the mug and place again in the microwave for 10-15 sec to soften and melt.
Add the sugar, flour and egg to the mug and mix to combine thoroughly with a spoon. Flatten the top of the mixture and sprinkle the walnuts on top.
Place in the microwave on a saucer for 1 minute. It may need a further 10-20 sec to finish it off completely, depending on your microwave.
Basic Caramel Sauce:
In an ovenproof ramekin add the extra sugar, butter and milk/cream and place in the microwave for 20-30 seconds. Remove and stir and repeat another two to three times depending on your microwave. You will end up with a dark caramel sauce.
Drizzle over the sticky date cups and enjoy!

6.Versiersel:
Meng sjokoladepoeier, water en Maizena saam en kook vir 20 sekondes op hoog, roer, en kook weer vir 20 sekondes.

MARSHMALLOW FLUFF AND PEANUT BUTTER MUG CAKE:
Combine 4 tablespoons of granulated sugar,
4 tablespoons of self raising flour,
3 tablespoons of cocoa powder,
3 tablespoons of melted butter, 3 tablespoons of peanut butter,
3 tablespoons of milk and 1 egg in a large mug.
Mix well until smooth.
Microwave for 2-3 minutes.
Top with a tablespoon of Marshmallow Fluff spread (available from Tesco’s as well as novelty shops such as firebox.com).
STRAWBERRIES AND CREAM MUG CAKE:
Combine 1 egg,
2 tablespoons of strawberry yoghurt,
1 tablespoon of vegetable oil,
1 teaspoon of baking powder,
1 teaspoon of vanilla extract,
4 tablespoons of granulated sugar and 5 tablespoons of all-purpose flour in a mug.
Microwave for 3-4 minutes.
Finish off by topping with strawberries and whipped cream for a deliciously fruity flavour.
ONE MINUTE MOCHA MUG CAKE:
(can be gluten-free!)
Topped with my favorite Four-Ingredient Ice Cream.
1 tablespoon plus 2 tsp cocoa powder
3 tablespoons spelt flour (or white, or Arrowhead Mills gf)
1/2 tsp instant coffee granules
1/8 tsp salt
2 tsp evaporated cane juice, or sugar (edit: xylitol works)
1/4 tsp baking powder
1 stevia packet (or 1 more tablespoon sugar)
1 tablespoon coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
3 tablespoons milk of choice (I used almond milk)
1/4 tsp pure vanilla extract
HERE'S HOW:
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 45-50 seconds (or more, depending on how powerful your microwave is). If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for the cake to cool before trying to remove it).
PEANUT BUTTER MUG CAKE - LOW FAT:

1 Coffee/Tea cup or mug
2 Tbsp Self Raising Flour
2 Tbsp Sugar
1 Egg
1 Tbsp Milk

WHAT TO DO:
Like we mentioned, it’s very quick and easy to make a delicious, warm muffin in 5 minutes in a microwave.
Generic muffin mix
1) Combine all these ingredients in a cup/mug and stir well:
2 Tbsp Self Raising Flour
2 Tbsp Sugar
1 Egg
1 Tbsp Milk
1 Tbsp Vegetable Oil
2) Choc Chip Muffin.
Add these additional ingredients to your cup or mug:
1 Tbsp of Cocoa powder
A handful (or two!) of chocolate baking chips that can be found in a local supermarket. Worst case scenario – cut a chocolate into small pieces.
3) Raspberry + Banana Muffin:
•Chop a banana into small pieces, add 1-2 handfulls into the mix
•Add a few frozen or fresh raspberries
Hint: to make the muffin more moist and tasty, add more raspberries or bananas. Mix it well.
4) Apple and Cinnamon Muffin:
Chop an apple into small, square pieces and add them to the mix (the more, the better!)
Add a dash of cinnamon
Put the finished mixture into the microwave, on high, for 2 minutes max.
In the end, decorate your muffins if serving to guests – it’s a cool idea to make a chocolate frosting for the choc chip muffin or put some vanilla ice-cream on top.

1/4 cup chopped mushrooms
1 thin slice deli ham
2 Tbsp. shredded Swiss cheese

1/4 cup chopped mushrooms
1 Tbsp. fontina or shredded mozzarella cheese
1 Tbsp. toasted chopped walnuts
WHAT TO DO:
1. Coat 12-oz. microwave-safe coffee mug with cooking spray. Add egg, water and meat/vegetables. Beat until blended. Microwave on high 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer.
2. Top with cheeses and nuts.

•Prepare Cream Cheese Icing according to directions listed, set aside. Combine all ingredients (minus Cream Cheese Icing) in a mug then whisk together with a fork until combine and nearly smooth. Microwave mixture on high power for 1 minute then check cake for doneness. If it is not fully cooked microwave for an additional 15 seconds. Serve warm topped with Cream Cheese Icing.
Cream Cheese Icing
•Combine all ingredients in a small bowl and whisk with a fork until smooth.
BANANA BREAD IN A MUG: [ discovered on Vittles and Bits, Adapted from Mickis Morsels]
Ingredients:
Non-stick cooking spray
3 tbs flour
1 tbs + 1 teas sugar
2 tbs brown sugar
1/8 teas salt
1/8 teas baking powder
1/8 teas baking soda
1 egg
1/4 teas vanilla extract
1 tbs vegetable oil
1 tbs milk
1 ripe banana, mashed
Preparation:
Spray a microwave safe mug with cooking spray.
In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.
Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.
Like all magical things that come out of the microwave, the inside of this will be hotter than the surface of the sun when you first remove it from the microwave. Give it a few minutes.
Seriously, that easy!
This was not the best ever banana bread, and trust me, I know some banana bread. But it’s a great quick fix, I have an overly ripe banana on the counter that I could toss in the freezer or use right now kind of bread. Perfect for a single serving or to impress an unexpected guest.
INSTANT MUG O' MAC & CHEESE IN A MICROWAVE"
1/3 cup pasta
1/2 cup water
1/4 cup 1% milk
1/2 cup shredded cheddar cheese
HOW TO COOK:
Combine the pasta and water in a large mug or bowl. Microwave on high for two minutes, then stir. A lot of times the water will overflow while it heats up. It is OK if this happens. If you don’t want it to overflow just make this in a very large microwaveable bowl. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval. The water should absorb completely and the pasta will be cooked through. If the pasta needs another minute it is okay to add one more teaspoon of water and microwave for another minute. My pasta cooked through in 4 minutes every time, but my microwaves tends to be very powerful.
Remove it from the microwave and stir in the milk and cheese. Microwave for another minute. Stir the cheese thoroughly into the pasta and eat up!

COFFEE CUP CHILAQUILES:
Yield: 1 serving
1 egg
1 tablespoon milk
Salt
Ground black pepper

5 tortilla chips, divided

Chopped green onion
HOW TO COOK:
1. Beat egg and milk with a fork in a coffee cup, adding salt and pepper to taste. Add cheddar; stir to coat. Break 3 or 4 tortilla chips into small pieces to fit in the cup; stir into the mixture. Add salsa.
2. Microwave on high until done, about 1 minute, 10 seconds. Garnish with remaining tortilla chips, sour cream, queso fresco and green onion.
CHOCOLATE PEANUT BUTTER MUG CAKE: [TO DIE FOR!!!]
2 tablespoons butter
2 tablespoons peanut butter
1/2 teaspoon vanilla
1 egg
2 tablespoons sugar
2 tablespoons flour
3 tablespoons cocoa powder
1/8 teaspoon salt
1/8 teaspoon baking powder
3 tablespoons chocolate chips
HOW TO MAKE:
Melt the butter in a small dish. Add the peanut butter and mix well.
In the mug, mix together the vanilla, egg, and sugar until well combined. Combine the flour, cocoa, salt, and baking powder and add to the mug. Pour in the peanut butter/butter mixture and mix well. Stir in the chocolate chips. Put in the microwave for 1-2 minutes or until desired doneness is reached (all microwaves are different so you might have to experiment a little. I only do it for about 1 minute). Top with peanut butter pie mousse and hot fudge.
Peanut Butter Pie Mousse
1 tablespoon softened cream cheese
1 tablespoon peanut butter
1/2 teaspoon vanilla
2 tablespoons whipped cream or cool whip
1 tablespoon powdered sugar
Mix together the cream cheese, peanut butter, and vanilla. Fold in the whipped cream. Sift in the powdered sugar (I just used a fork) and fold that in too, trying not to over stir.
Also, I used dark cocoa powder because it happened to be on a lower, more easy to reach shelf at the time. I actually like the regular kind better, but whatever floats your boat.
PEANUT BUTTER MUG CAKE: [LOW FAT]

Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals. Mine was done at 2 minutes. You don’t want to overcook it or it will become rubbery. You can also make this into two regular sized mugs. You can mix the batter all in one mug and then pour half into another mug. Make sure you cook each one individually. They will likely be done faster (around 1 1/2 minutes)

For a fast, healthy breakfast, it doesn't get any easier than this omelet you can make in a mug.
Ingredients:
1 large egg
2 egg whites
2 tbsp shredded cheddar cheese
1 tbsp diced green bell pepper
Salt and ground black pepper to taste
Cooking spray
Directions:
Combine egg, egg whites, cheddar cheese, bell pepper, salt, and ground pepper in a microwave-safe mug coated with non-stick spray. Microwave on high for 1 minute; stir. Return to microwave and cook until eggs are completely set, 1 to 1 1/2 minutes longer. Sprinkle cheese on top and serve.
MINI MINUTE OMELET:
1 egg
2 ounces cream cheese
chives to taste
dash of salt
HOW TO COOK:
Blend the chives in with room temperature cream cheese, or use purchased cream cheese and chive spread. Beat the egg in a cup. Spray a microwave safe bowl or plate with non stick spray. Add the egg and cook in the microwave for about one minute. Microwaves vary, so take it out when no liquid remains. Spread the cream cheese onto the egg. Sprinkle with salt. Flip the egg into a half circle and serve.
I just added a small serving of cantaloupe cubes and blueberries on the side. (I smeared a bit of cream cheese on the top too, but that is just to be frugal and eat the last little bit in the bowl. It is not necessary by any means.) So easy and fast.
COFFEE CAKE IN A MUG:
No meal is ever complete without something sweet at the end. This treat doubles as dessert and a decadent brunch dish.
Ingredients:
Cake batter:
1 tablespoon softened butter
2 tablespoons white sugar
1/2 beaten egg
2 tablespoons sour cream
2 drops vanilla extract, or more to taste
1/4 cup all-purpose flour
1/8 teaspoon baking powder
Topping:
2 tablespoons all-purpose flour
1 tablespoon brown sugar
1 teaspoon cinnamon
1 tablespoon butter
Directions:
Stir softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add flour and baking powder into the mixture; stir until smooth. Mix the topping ingredients in a separate bowl and mash the butter into the mixture with a fork or pastry cutter until mixture is crumbly. Then sprinkle it over the cake batter in the mug. Cook in microwave on high for 1 minute. Then continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.
1 MINUTE BROWNIE IN A MUG:
Ingredients
•1 Tbsp cocoa powder
•1 Tbsp flour
•1 Tbsp brown sugar
•1 Tbsp water
•1 Tbsp canola oil
•a pinch of salt
•ice cream, optional
Instructions
1.In a mug or small microwave safe dish, add the coco powder, flour, sugar, water, oil, and salt.
2.Stir to combine.
3.Microwave for 30 seconds. Serve warm with a scoop of ice cream.
2-MINUTE FRENCH TOAST IN A CUP:
First you need bread. This is pan de mie, which is basically just french for sandwich bread. Your weber white will work fine, or whatever you have on hand. I prefer my french toast soft-ish but if you like a little crunch go for a baguette. It truly does not matter. An old croissant. A nutty multigrain. A pile of tortillas might even work, i’m not kidding. Anyway, you’ll need one or two pieces of bread per cup. I like to make 2 cups at once so I can split an egg, but you can totally make one big cup with more bread and a whole egg. Work with what you’ve got.
Cube your bread.
Get your cup or cups ready. Butter the inside, either rub a pat of butter around, or you can melt the buter in a mircowave and slosh it around. Up to you.
Place the bread in the cup of your choosing. I used two small cups this time because my pesky husband wanted in on the action, but one big cup totally works. About a slice or a slice and a half will do it. Smoosh it down a bit but don’t compact it so much cause you need the liquid to be able to work it’s way in.
Now in a separate cup or ramekin do the following:
-crack and egg into it
-add 3 tablespoons of milk
-sprinkle cinnamon
-if you like your french toast really sweet or vanilla-y, add a single drop of vanilla extract (I don’t do this, but it might make you love it even more)
Mix it all together with a fork.
Pour the mixture into your cup/cups. Smoosh it a little, and give it a minute to soak down into the bread.
Now stick your cup in the microwave. Start with one minute, then add ten seconds at a time until it’s cooked to your liking (no runny eggs). In my microwave that’s 1 minute, 20 seconds.
Mmm, eggy cinammon-y bread. Yes!
Add syrup. You have to have syrup. Or whip cream. But really, syrup.
Eat. Repeat nightly, or morningly.
OMELET IN A MUG:

STICKY DATE PUDDING IN A MUG:
Ingredients
10 x dates, roughly chopped
1½ Tbls boiling water
1/8 tspn bicarb soda
1½ Tbls butter
1½ Tbls brown sugar
1½ Tbls self - raising flour
1/2 x egg beaten
½ Tbls walnuts, roughly chopped
1 x caramel sauce:
1 Tbls butter - extra
1 tspn milk or cream, extra
4 Tbls browns sugar, extra
Method
This recipe is to make 1 mug serving.
*I would recommend making two though so you don’t have to halve an egg*
In a mug place the chopped dates and water. Place in microwave for 50 sec until the dates are softened.
Add the Bicarb soda to the mug and let it sit for a minute and mash roughly with a fork.
Add the butter into the mug and place again in the microwave for 10-15 sec to soften and melt.
Add the sugar, flour and egg to the mug and mix to combine thoroughly with a spoon. Flatten the top of the mixture and sprinkle the walnuts on top.
Place in the microwave on a saucer for 1 minute. It may need a further 10-20 sec to finish it off completely, depending on your microwave.
Basic Caramel Sauce:
In an ovenproof ramekin add the extra sugar, butter and milk/cream and place in the microwave for 20-30 seconds. Remove and stir and repeat another two to three times depending on your microwave. You will end up with a dark caramel sauce.
Drizzle over the sticky date cups and enjoy!

Opsioneel:

100ml drinksjokoladepoeier of kakao en suiker
100ml water
5ml Maizena
MAAK DAN SO:
1.Klop die eier, sout en suiker saam.
2.Meng die melk en olie in 'n ander bak saam.
3.Meng die eier-suikermengsel saam met die olie-melkmengsel en vou die koekmeel en kakao met 'n vurk in.
4.Deel beslag in die koppies.
5.Plaas in mikrogolfoond en bak vir 3 min. op hoog. Moenie die bakproses onderbreek nie. Laat staan vir 'n minuut en haal dan uit.
6.Versiersel:
Meng sjokoladepoeier, water en Maizena saam en kook vir 20 sekondes op hoog, roer, en kook weer vir 20 sekondes.
7.Gooi die versiersel bo-oor die koek in die koppie.
Die koek kan ook uitgedop word in 'n kleinbordjie en so opgedien word met die versiersel bo-oor. Roomys kan bybedien word.
MARSHMALLOW FLUFF AND PEANUT BUTTER MUG CAKE:
Combine 4 tablespoons of granulated sugar,
4 tablespoons of self raising flour,
3 tablespoons of cocoa powder,
3 tablespoons of melted butter, 3 tablespoons of peanut butter,
3 tablespoons of milk and 1 egg in a large mug.
Mix well until smooth.
Microwave for 2-3 minutes.
Top with a tablespoon of Marshmallow Fluff spread (available from Tesco’s as well as novelty shops such as firebox.com).
STRAWBERRIES AND CREAM MUG CAKE:
Combine 1 egg,
2 tablespoons of strawberry yoghurt,
1 tablespoon of vegetable oil,
1 teaspoon of baking powder,
1 teaspoon of vanilla extract,
4 tablespoons of granulated sugar and 5 tablespoons of all-purpose flour in a mug.
Microwave for 3-4 minutes.
Finish off by topping with strawberries and whipped cream for a deliciously fruity flavour.
ONE MINUTE MOCHA MUG CAKE:
(can be gluten-free!)
Topped with my favorite Four-Ingredient Ice Cream.
1 tablespoon plus 2 tsp cocoa powder
3 tablespoons spelt flour (or white, or Arrowhead Mills gf)
1/2 tsp instant coffee granules
1/8 tsp salt
2 tsp evaporated cane juice, or sugar (edit: xylitol works)
1/4 tsp baking powder
1 stevia packet (or 1 more tablespoon sugar)
1 tablespoon coconut or veg oil (Edit: many commenters have said it still tastes good if you sub applesauce or mashed banana. But I can’t personally vouch for the results if you make that substitution.)
3 tablespoons milk of choice (I used almond milk)
1/4 tsp pure vanilla extract
HERE'S HOW:
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little dish, ramekin, or even a coffee mug. Microwave 45-50 seconds (or more, depending on how powerful your microwave is). If you don’t want to eat it straight out of the dish, be sure to spray your dish first (and then wait for the cake to cool before trying to remove it).
PEANUT BUTTER MUG CAKE - LOW FAT:

1 Coffee/Tea cup or mug
2 Tbsp Self Raising Flour
2 Tbsp Sugar
1 Egg
1 Tbsp Milk
1 Tbsp Vegetable Oil
WHAT TO DO:
Like we mentioned, it’s very quick and easy to make a delicious, warm muffin in 5 minutes in a microwave.
Generic muffin mix
1) Combine all these ingredients in a cup/mug and stir well:
2 Tbsp Self Raising Flour
2 Tbsp Sugar
1 Egg
1 Tbsp Milk
1 Tbsp Vegetable Oil
2) Choc Chip Muffin.
Add these additional ingredients to your cup or mug:
1 Tbsp of Cocoa powder
A handful (or two!) of chocolate baking chips that can be found in a local supermarket. Worst case scenario – cut a chocolate into small pieces.
3) Raspberry + Banana Muffin:
•Chop a banana into small pieces, add 1-2 handfulls into the mix
•Add a few frozen or fresh raspberries
Hint: to make the muffin more moist and tasty, add more raspberries or bananas. Mix it well.
4) Apple and Cinnamon Muffin:
Chop an apple into small, square pieces and add them to the mix (the more, the better!)
Add a dash of cinnamon
Put the finished mixture into the microwave, on high, for 2 minutes max.
In the end, decorate your muffins if serving to guests – it’s a cool idea to make a chocolate frosting for the choc chip muffin or put some vanilla ice-cream on top.

For ham, mushroom and swiss scramble:
1/4 cup chopped mushrooms
1 thin slice deli ham
2 Tbsp. shredded Swiss cheese
For veggie nut scramble:
1/4 cup chopped broccoli
1/4 cup chopped mushrooms
1 Tbsp. fontina or shredded mozzarella cheese
1 Tbsp. toasted chopped walnuts
WHAT TO DO:
1. Coat 12-oz. microwave-safe coffee mug with cooking spray. Add egg, water and meat/vegetables. Beat until blended. Microwave on high 30 seconds; stir. Microwave until egg is almost set, 30 to 45 seconds longer.
2. Top with cheeses and nuts.
DENVER OMELET IN A MUG:

WHAT TO DO:
Layer ingredients: cheese, tomato, bacon, mushrooms and bread circle.
Whisk egg, add salt and pepper. Pour egg mixture carefully over.
Microwave at 80% power for 3 minutes or until set.
Serve immediately.
